Zucchini Pasta with Crunchy Peanut Sauce

This meal was called, “Open the fridge, see leftover pasta, see zucchini, come up with a sauce dinner.”  Sometimes that’s how the best recipes are born!  Yes, I know it’s a little strange that I happened to have all of the ingredients for this sauce in my fridge, let’s just say its very well stocked.  I will never be able to compete with my parent’s refrigerator, but I’ve accumulated quite a few interesting ingredients in my culinary adventures.  Fish sauce, chili sauce, sriracha & coconut oil just happen to be a few of them.

This is a great dish to make with leftover pasta, I had some from a pasta salad I made earlier.  Who really eats an entire pound of pasta at once anyways?  What’s that? A family? Oh, right.  Well, it’s just us right now, so a pound is just WAY too much. It tastes a lot like it’s yummy greasy cousin (Pad Thai), but with a little American (or Italian?) twist.  Ok, it’s just a mutt, the way most of my dishes are, or “fusion” if I want to sound fancy.

Simply make the peanut sauce, sauté some vegetables, mix it all together and you’ve got yourself a meal! It was really filling too, I almost couldn’t make it through my whole plate.

Oto (our dog) really loves it when I slam things with my kitchen mallet.  He loves it so much he feels the need to bark the entire time and jump up trying to grab it.  It’s really fun.  It makes slamming things with a hammer even more relaxing than it usually is.

Just top the pasta mixture with some of those crushed peanuts & green onions and you’re ready to jam!

Paddle Boarding!

We tried stand up paddle boarding for the first time last night, it was AWESOME!  Of course I don’t have any actual photos since that would require me carrying my iPhone on the board with me which was NOT going to happen. So I snapped this picture as we were driving away.  Does that not look like a perfect night for paddle boarding?  75 degrees, not a cloud in the sky and completely still water.  Gorgeous!

I was a little shaky at first but I started to get more comfortable towards the end.  Soon I’ll be attempting some burpees on that thing!  Let’s see how long it takes us to purchase some boards.  Like we don’t have enough hobbies already. But it’s SO much fun! Pretty please, can I get one??

Zucchini Pasta with Crunchy Peanut Sauce

Crunchy peanut stir-fry with whole wheat pasta, zucchini & summer squash. A quick, easy & delicious meal!

Ingredients

sauté

  • 1/2 onion (sliced)
  • 1/2 zucchini (cut in half moon slices)
  • 1/2 summer squash (cut in half moon slices)
  • 3 cloves garlic (diced)
  • 1/2lb whole wheat pasta
  • 1/4 cup peanuts (crushed)

peanut sauce

  • 2 tablespoons coconut oil
  • 3 tablespoons peanut butter
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon agave nectar
  • dash sriracha

Directions

1. Cook pasta according to package instructions.
2. Combine all of the peanut sauce ingredients together in a food processor or blender. Set aside
3. Sauté the onion, zucchini & summer squash in a little oil (about 5-8 minutes). Add garlic and continue cooking for another 2 minutes.
4. Add the cooked pasta and the peanut sauce to the vegetable mixture and stir well. Sauté for another 2-3 minutes.
5. Serve with crushed peanuts and sliced green onions (optional).
