Ok, I’m just going to get right down to business here. My body is aching from boot camp this morning and I’m exhausted from staring at a computer screen all day SO, here are my eats for Wednesday.
For breakfast I had my usual green smoothie made with kale, spinach, cucumber, blueberries, water, strawberries, pineapple & a little vanilla protein powder. It was delicious (as usual).
I wasn’t sure if the smoothie was going to hold me over until lunch so I had a little bit of leftovers of the frittata I made Monday night. It had caramelized leeks, spinach & sweet potatoes. It was yummy and took about 20 minutes to make so it was a great dinner. And breakfast for that matter!
For lunch I had some lemon ginger lentil soup that I made this weekend, I’ll have the recipe for this one soon. It’s a GOOD ONE! I also had another small piece of the frittata but I don’t have a picture because there’s no need for you to look at another sad photo like that, it was delicious, I swear!
For a snack I made some chili & cocoa powder kale chips. I’ll have the recipe coming up for this one too, they were GOOD! Like I may or may not have finished all of them. Yes, I ate an ENTIRE head of Kale today, and if you count the handful I put in my smoothie, I ate OVER an entire head of Kale. Can you die of overconsumption of Kale? Hope not! Actually, that wouldn’t be a bad obituary. ”She lived a happy life and died with her belly full of green goodness.”
For dinner I made a Mexican pie which was inspired by Heather’s Mexican Pie Recipe. I really hope I can salvage this and take some better photos tomorrow because it deserves to be shared, it was so good! I made it with black beans, shredded chicken, peppers, spinach & onions, and a little bit of almond cheese on top.
Everything was going great, the pie was in the oven bubbling away. I took it out to take the tin foil off and then decided I was too lazy to take BOTH pot holders out because the drawer was 2 inches from my hand and that would be WAY too much work. So being all strong I went to put the heavy pan back in the oven using my one super strong hand (which happens to not be as strong as I thought) and in slow motion the pie went flying INTO the oven. Yup, I dropped it. In. The. Oven. I shouted expletives at the dog as I used a spatula to scrape beans and chicken out of every crevice of my oven. It was fun.

How sad is that?? It looked SO pretty before the incident. What it lacked in beauty, it made up for in taste. I’ll be making this again, thanks for the idea Heather!
WHAT MAKES ME HAPPY:
Tea.
I’ve been really into tea lately. It’s my new afternoon treat and it gives me that little extra energy to get through the afternoon. It’s purely mental because it’s decaf tea but there’s something in the routine of making the tea and having that warm cup in my hands that I love.










No way!!! I’m so sorry that you dropped your pie, but so excited you made it! There is not much worse than cleaning food you planned on eating out of a hot oven while your adorable dog stands by anxiously salivating for scraps… I’ll have to post your take on it, because I’m confident that it became even more amazing with your own special cooking imagination Mai-Lis. It was pretty funny, I was flinging bits of chicken and beans all on to the floor and I told him to wait so he was just sitting there with his head low trying so hard not to lick it all up. I let him lick the remains after I cleaned up and I’m pretty sure he stuck his tongue in every crack in our oven. Who needs a cleaning person when you have a dog?? Thanks for the idea!! I’ll be trying it with ground beef next time since our freezer is full of it from the cow share we bought
Girl, that kale looks delicious. I don’t blame you one bit for not eating it all. I don’t think I’d be able to stop once I started!
I would love that lentil soup recipe. You are awesome…dropped pie and all. I’ve decided to just make everything you make the day after…Imitation is the most sincere form of flattery:) However, if you just want to bring the leftovers to Bootcamp, I’d be cool with that too.

Oh, no! That soooooooo sounds like something I would do too! I mean, our pot holder drawer is *RIGHT BESIDE* our oven, and I still can’t be bothered to use more than one most of the time :/

Oh no. I hate when that happens! I remember this past Christmas where I was trying to check the bottom of a pumpkin pie box (don’t remember the life of me for now as I can’t eat pie…) but the one side wasn’t closed so the pie slid right on out and SPLAT onto the floor. I was so angry with myself.
Oh no!! That sucks so bad!! I’m glad Tom wasn’t home yet, I didn’t react too maturely about it (moments you wish you were a kid and you could throw a full-out temper tantrum).

that mexican pie looks soooo good! i would do the same thing, it’s always the prettiest recipes I drop or tilt and mess them up! and those kale chips sounds great!

oh no thats the worst thing in the world when that happens – i did it with a batch of cakes (before they were cooked) a while ago; it was horrific. you just want to cry! hopefully it was still tasty and you managed to salvage it
