Hey ya’ll, happy Wednesday! I’m not from the south so I have no reason to say “Ya’ll” but I’ve always wanted to be able to say it without people looking at me weird, and since I can’t see you looking at me weird right now its like it never happened. It’s just such a great word! So many uses! Guess I’ve got to start working on my southern accent.
I can’t believe it’s Wednesday already! Ever have those weeks where you’re so busy you want them to be over, but you also don’t want them to go too fast because you’ve got so much stuff to do and the quicker it goes, the less time you have to get it all done? Yah, I’m having one of those weeks. It’s Wednesday AHHH!
Ok, enough stressing, let’s talk about some good eats.
For breakfast I had a big fat green smoothie. I used Kale, Cucumbers, Spinach, Lemon, Avocado, Pear & Apple. Yum yummy! I also ate a few strawberries (not pictured because they were being stuffed in my face about .2 seconds after coming home from my workout).
For lunch I had this UBER-DELICIOUS little mini open-faced sandwich thingy. I toasted an ezekiel english muffin and topped it with a few slices of almond cheese, a nice dollop of guacamole, some sprouts and a squeeze of honey mustard (see photo at top for this addition). I don’t know why I’m so obsessed with this but it was just SO damn good. I might have to add this one to the regular routine, for those days where I don’t have leftovers, which is never since I always make WAY too much food!
For a snack I had a small whole wheat tortilla with Toasted Coconut Almond Cashew Butter, shredded coconut & sliced banana.
For dinner we had some leftover chicken which I mixed with some salsa and topped with guacamole. On the side we had a roasted vegetable salad with orange-vanilla vinaigrette (recipe coming soon)!

Yep, that sandwich looks so good. I didn’t know Ezekiel bread made English muffins! I’ll have to try those soon.

I love the cheese and guacamole combo too, but I’ve never heard of almond cheese! Your meals look delicious!
Thanks Susan, It’s a great non-dairy cheese alternative, they have it at Whole Foods & the health food section at supermarkets. It tastes really good when its melted!
