WIAW & Almond Milk {No Egg} Nog

Happy Hump Day!  Once again, I’m realizing how quickly Christmas is approaching! I’m much less stressed now since we got all of our shopping done this weekend but I’m not ready for the holiday season to be over yet.  I think they should move Christmas to January or something, that way we’d have more time to enjoy the fun festive season & we’d have a higher probability of having a white christmas.  It looks like we’re not supposed to get any snow in Massachusetts so I’m holding out hope that we’ll get some snow at my parents house in New Hampshire.  Common baby, SNOW!!!  The snow shoes I got for Christmas last year are still in the plastic, I’m ready to whip those babies out!!

I’m really excited to share this quick, easy & healthier egg nog recipe with you today.  I’m probably not the first person to do this but I have to admit, I feel pretty smart.  I was scared to google it because I’m sure it would rain on my parade when I found a million recipes like this out there so I’m going to live in my little bubble for the moment and pretend I was the first.

Before we get to that, here are my eats for the fabulous What I Ate Wednesday!!!

For breakfast I had an orange and an egg white omelette with salsa & zucchini (SO GOOD!)

For lunch I had some leftovers from dinner last night.  I made some steak tips with a mushroom brie sauce, inspired by Jenn’s Mushroom Brie Soup recipe which I am absolutely DYING to try!  I know it doesn’t look too pretty but this was really friggin delicious!  I served it with a side of “mock” mashed potatoes (Cauliflower & White Bean Purée), the delicious creation from Amanda at Pickles & Honey.  I love making mashed cauliflower but the beans added a great texture and depth of flavor. GENIUS!

For a snack I had some popcorn, about every 5th kernel or so was tossed to the dog, his face was just so cute I couldn’t resist!!

Poor Tom had his wisdom tooth surgery so he is now experiencing the mushy food hell that I went through a few weeks ago.  I made him some macaroni and cheese and added a little zucchini and sausage to mine. Nothing special but it took about 5 minutes and it made him happy 🙂

Ok, now let’s move on to this fantastic little holiday beverage.  I absolutely love egg nog but I always hesitate to buy it since I usually only want a little shot of it and the rest gets thrown out.  I decided to try making a little “mock” egg nog using vanilla almond milk and no eggs and I have to say, it came out tasting pretty damn close!  Of course it wasn’t as thick and creamy but the taste was amazing.  I used the unsweetened Vanilla Almond Milk from Trader Joes, if you can only find sweetened, just cut back on the honey a little bit.  If you can’t find vanilla, just add a little more vanilla extract.

Know what I bet would be amazing??  Using this in your coffee.  OOOH, yah, I’m going to try that tomorrow!! Or a smoothie?? Or some banana soft serve?? AHHH So excited! I can’t contain myself!

This weekend I spent like 8 hours baking so I’ll be coming back soon with a little holiday baking roundup where I’ll feature some of my favorite holiday cookie recipes.  I usually make a ton of cookies every year but this grasshopper square recipe is the only recipe I’ve made each and every year, it is THAT good!

It’s a layer of super fudgy chocolate brownie topped with a layer of white chocolate peppermint ganache and a top layer of rich chocolate ganache.  OMG, party in your mouth!!  I’m not going to lie, it is a little complicated and time consuming but OH. SO. WORTH. IT.  Just do it. Your mouth will thank you. Plus it makes like a million little pieces of fudge so you can afford to give some away and still have PLENTY for yourself! Christmas Movies.

I don’t like watching movies over again.  Like, not even my favorite movies.  Once is enough.  But Christmas movies? Oh, those are in a league of their own.  My favorites include: Elf, Home Alone, Charlie Brown, Miracle On 34th Street (the original), Rudolph the Red Nosed Reindeer & The Grinch (the original, no the creepy Jim Carrrey version).

BTW – I took this picture of Elf just as he was saying “You don’t smell like Santa, you smell like beef & cheese,” HA! Love that movie! So many genius lines.  Another favorite: “Well, we can’t just throw him out in the snow!” “Why not? He LOVES the snow!”

Almond Milk {no egg} Nog


  • 2 cups unsweetened vanilla almond milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons honey
  • sprinkle freshly grated nutmeg
  • sprinkle cinnamon


1. Heat all of the ingredients in a small saucepan over medium heat until it reaches a slow simmer. Stir everything together and simmer for a few more minutes until heated through.
2. Cool in the refrigerator for a few hours and enjoy!

    I’m the same way with movies – I very rarely watch a movie more than once, but Elf is a different story. It never seems to get old!

      Oh my gosh, they were so good! I used some of the leftovers in the Mac & Cheese to make it extra creamy using less cheese, yum!!

      I agree! I threw on the apron, cranked the Christmas tunes and turned our kitchen into a disaster zone, it was awesome!

    Just like you I was keeping my fingers crossed that we get some snow here in NJ for Christmas but that seems like a dream at this point. 🙁 Elf is my second favorite Christmas movie with Christmas vacation being the first for me. 🙂 I made your “egg” nog last night and its fantabulous.

  9. I will be so sad if we don’t have a white christmas again this year, last year was muddy and warm…disgusting.
    As for movies, I’m the same way, once I’ve seen it, I’m done…but Christmas movies I can watch over and over again. My favorites: Elf, Christmas Vacation, Home Alone, The Family Man and The Family Stone.
