Holy moly, is it really Wednesday already? In one way I love that the weeks fly by because it gets us to the weekends that much faster, but in another way it makes me sad that my precious summer is going to be gone in an instant. While its still here I’m going to soak up as much as I can! I’m not even complaining about the 90 degree weather with no A/C, anything is better than that winter we had!
Well, since it’s Wednesday I guess it’s time to share some eats for What I Ate Wednesday. For breakfast I had a piece of toast along with the usual egg & salsa scramble. I also had a little fruit salad with coconut whipped cream like this healthy ambrosia salad I’ve made in the past. Last night we were going to a Crossfit beach workout/community BBQ so I made this salad for dessert. We were halfway there when I got an alert on my phone saying there were severe thunderstorms on the way with possible wind gusts of up to 60 mph. We realized we had left all our windows open at the house so ended up turning around and heading home. Thus an entire fruit salad to eat ourselves, oh well, its pretty delicious!
I was running out the door for an appointment so I threw together a super quick lunch of some cold leftover pizza (isn’t that the best?), some carrots and a little more fruit salad.
For dinner we grilled up some chicken breast and green beans and served it alongside some garlic peanut soba noodles. Recipe coming soon on these! They were finger-lickin’ good, and you don’t even use your fingers to eat them.

Curling up on the beach under a blanket in the evening.
On Sunday we decided to walk down to the beach with Oto and set up camp to watch the fireworks across the water. It was a beautiful evening but got a little chilly with the cool ocean breeze so we all cuddled up in a big fuzzy blanket and enjoyed the last moments of the 4th of July weekend.
