WIAW #81

breakfast

Oh good lord, I just ate WAYY too much for dinner.  My mom asked me the other day if “What I Ate Wednesday” was really everything I ate in a day or if it was a collection of my healthier meals throughout the week.  Well, you’re about to see the answer when I share my fatty van fatso dinner with you today.  Its true, I’m probably a little more conscious about what I’m putting on my plate on Tuesdays since its all getting photographed but it is honestly all my eats for one entire day.  I think that’s what’s so great about it, you get a realistic view into what people are eating on an everyday basis, not just the fancy camera shots with styled food but honest, simple meals that people eat every day.

Anyways, here are my honest What I Ate Wednesday meals for today!

For breakfast I had a piece of toast with egg and tomato along with some watermelon, strawberries & blueberries.  Now that summer tomatoes are back, I’ve been having them with almost every meal lately, this is my new go-to breakfast.

For lunch I had some vegan Olé Mole chili (the same as last week) along with open-faced cheddar toast with some bacon and guacamole.

snack

For an afternoon snack I had some watermelon pieces and pretzels dipped in hummus.  I’ve found that I absolutely love watermelon but I get really lazy about cutting slices and then standing over the sink or a bowl while I eat it (because that’s just WAY too much work). SO, I’ve started using a melon baller on the entire watermelon so I have easy ready-to-eat pieces in the fridge at ALL TIMES, because this is very important when its hot out and all you can think about is juicy bite of watermelon.  I always think about that first person in the wild who discovered watermelon.  Taking a bite into that sweet watery flesh, they seriously thought they must have died and gone to heaven. SCORE!

Ok, are you ready for this…

Yup, that’s what I ate for dinner. Whoops.  Still think I’m hiding things from you?  I went out to dinner with a friend and we shared some bbq pork nachos and then a flatbread pizza.  I was only able to eat one piece of the flatbread because I was too stuffed.  Why would I be stuffed?  There’s only like two chips there right?  Appetizers are always so good but always so bad, I never learn my lesson.  Oh well, when there’s cheese & pulled pork involved, I’m not sure I’ll ever want to learn that lesson.

Anyways, if you need to find me I’ll be jogging in place for the next week to try and work that off.

 

WHAT MAKES ME HAPPY:

The sound of clinking dishes.

Ok, this one may be a little strange and hard to explain.  The other evening I was walking through the neighborhood with Oto at sunset and I walked by a house where I could hear the sound of clinking silverware and dishes drifting out the window.  Something about that sound just made me happy and reminded me of family dinners and everyone eating together.  Food is such a great thing that brings everyone together and I think the sound of clinking dishes on a summer evening is just a representation of that feeling.

    Those nachos look delicious! haha there was pork in it right? therefore it was somewhat healthy ;)
