Happy Wednesday! How amazing is it that it is already WEDNESDAY! woohooo! I love short weeks! Besides the fact that I have to squeeze an entire weeks worth of work into 4 days of course, that part always sucks.  I hope you all had a fantastic Memorial Day weekend.  We got in some good time with friends, grilling and even a kinda sorta beach day.  Despite the fact that its currently in the 40s outside, I’m optimistic that summer will come soon.

Let’s get started with the What I Ate Wednesday party!

For breakfast I had a piece of toast with blueberry jam and a chocolate peanut butter banana spinach smoothie.

As a late morning snack I had a handful of almonds.

For lunch I had a salad along with a little side of pulled pork.

For an afternoon snack I had a banana and a scoop of peanut butter (not pictured).

For dinner I had one of my favorite salads a local pizza place, its a Chicken Kabob Salad.  I think I’ve mentioned the dressing before, its this amazing house greek dressing and I’ve been trying so hard to copy it but I can’t get it quite right so I keep going back for more 🙂  The chicken is so flavorful & tender!  Chicken Kabob salads seem to be a thing around here, they are a staple on the menu at almost every pizza place.  When I lived in NH, I don’t remember that being a thing, maybe its a north shore or Massachusetts thing.

Happy Wednesday!!

Yard games.

We went to my brother’s lake house this weekend and the sky cleared up enough for us have fun playing some yard games.  I spent most of my time watching because I SUCK at bags.  I don’t know what it is, I consider myself a pretty athletic and coordinated person but when it comes to this game (and frisbee), my wrists do a little spaz at the end and I throw it off to the side somewhere, its like my arms aren’t connected to my body or whatever.  Ok, so maybe just enjoying summer and WATCHING yard games makes me happy 🙂

All of your meals look delicious! How much spinach do you put in your smoothies?

Thanks Gabi! I usually put about two large handfuls in my smoothies, it depends on what type I’m making, I put more in if I’m making a green smoothie 🙂

  2. Super yummy looking eats!! Do you have that smoothie recipe posted? It sounds delish!!
