WIAW #64

Breakfast

Happy Wednesday!  Umm, I don’t know  about you but I’m ready for spring. Enough of this winter crap!  I’d like to be able to go outside without spending 10 minutes layering up with boots, jackets, gloves and hats.  I want to go to the Farmers Market and eat fresh, locally grown fruit for breakfast.   I want to go for long runs on the beach and have my afternoon walks with Oto back.  Only a few more months to go,…I think I can, I think I can, I think I can…

Anyways, let’s get the party started and go over some eats for What I Ate Wednesday.  For breakfast I had a grapefruit and a piece of ezekiel toast with some dill havarti cheese and 2 over easy eggs.

Lunch

For lunch I had a mexican chicken & roasted corn mixture over mashed sweet potatoes and some diced avocado on top.

Snack

For a snack before cross fit I had a piece of bread with peanut butter and a banana.  I was glad I did because holy crap, it was a doozy!  The WOD consisted of a 1000m row, 2 strict pull ups, 2 squat cleans, 11 hand stand push ups, 75 box jumps, 80 wall balls, 73 burpees and another 1000m row. Yup, I’m dead. I totally earned the pasta we had for dinner.

Dinner

For dinner we had some quinoa pasta topped with some tomato sauce and sweet italian sausage and a spinach salad.

….AND….I’m ready for bed.

 

WHAT MAKES ME HAPPY:

Watching the olympics.

Sochi

It makes me so happy to see the entire world put aside their differences and come together to do something peaceful in the name of good competition.

      You should, it was a killer! It two of our trainer’s birthdays so they made it up together. The time cap was 29 minutes but it took me 29:38 to finish it.

  2. Oh yum that all looks delicious!! And that workout sounds ridiculous! I look forward to finally giving crossfit a whirl post baby this summer!

    Your lunch looks so tasty! Yum! Do you have a recipe?

      Hi Yuliya! I used the Trader Joes Pollo Asada, I sliced it thin and cooked it with onions and roasted corn (also Trader Joe’s). I served it as fajitas the first night and then for lunch I just cooked up a sweet potato in the microwave and served it on top of that :)

    Funny thing, I had sweet potato topped with chicken and some cowboy caviar. Totally similar. :)
