Hey there! Just stopping in to share my eats for the What I Ate Wednesday party! Today was a little insane, I had so much work to do I could barely stop for a second to breathe. Fortunately I was able to escape for a much needed Crossfit WOD, come home for a quick dinner and then leave again for a Farmer’s Market meeting. Needless to say, the bed is calling my name right now so I’m going to make it quick today.
For breakfast I had a grapefruit and some leftover roasted potatoes and two over-easy eggs. SO GOOD! It was actually too much, I wasn’t able to finish it all.
For lunch I had a spinach salad with roasted broccoli, artichokes, feta & tomatoes and a bowl of leftover chili. It was a white chili I made with shredded chicken, artichokes, chickpeas & cannellini beans, the recipe was very similar to this (without the spinach). This was even better leftover than it was the first day I made it. If you haven’t made a white chili before, now is the time to try it! Its definitely chili season!
I needed a little quick fuel before heading out to crossfit so I had a banana and a spoonful of peanut butter.
I had about .2 seconds to prepare and eat dinner between crossfit and my meeting so I toasted up some bread, spread on some avocado and aged gouda and called it a day.

I kill pretty much every plant that I come in contact with so I’m so proud of this plant that Tom bought me OVER a year ago! Look at those healthy leaves and beautiful flowers!! It makes me so happy every morning when I check on it every morning and see the little flowers budding. Yay, I have a green thumb! (at least for one un-killable plant)
