Hey guys. I’m exhausted. Beat. Tired. Whooped. Tuckered Out. I’m going to try to get through this and tell you what I ate before my eyes close though because I wouldn’t want to miss a What I Ate Wednesday party. Speaking of which, how awesome is this short week? In case you thought yours was awesome, we’re flying to Florida on Thursday so tomorrow is my Friday. Yup. Be jealous.
For breakfast I had a green smoothie made with apple, pear, banana, almond milk, kale, tomato & carrots. I also had a small bowl of “Paleonola” with coconut almond milk. We found the granola this weekend at the amazing new Whole Foods in Lynnfield. Its made purely from nuts, seeds, coconut, flax and other yummy paleo-approved ingredients.
For lunch I made a spinach salad with some leftovers from dinner last night (roasted carrots & swordfish).
Snack consisted of an apple (of course). My snack will probably be an apple for the rest of the month until we eat them all. Its not getting old yet, I’m still loving them. I just noticed my little toes in the background of of this photo. ha! creepy.
For dinner I made a quick bowl with quinoa, roasted butternut squash, kale, feta and a little drizzle of roasted garlic caesar dressing.
Sorry to be boring today but I really need to get to bed. We’ll be lucky if I can even hit the publish button. Happy Wednesday folks!
WHAT MAKES ME HAPPY:
When a song I love comes on the radio.
It’s totally different to have a song pop up on the radio than to play it yourself. The other night I was driving back from working out and all these great old Fugees and Lauren Hill songs were coming on the radio. I was singing my heart out!
