Well, its What I Ate Wednesday again and I have to start by saying congratulations to Jenn over at Peas and Crayons on the arrival of her new little chickpea. She is absolutely adorable! It seems as though everyone is popping them out these days. One of my best friends just had a baby a few days ago so I’m heading down today to visit the cute little thing. Can’t wait!!
I also had a piece of toast spread with a little PB Crave.
For lunch I had a mystery vegan soup. It was frozen in my freezer from the Farmer’s Market and I have no idea what it was but either way it was delicious. Along with it I had a leftover piece of rosemary flatbread I made last week and a piece of toast with salmon, avocado, sprouts and mustard.
For a snack I had some popcorn and an apple. I bought my first bag of apples today, so excited!!
For dinner I made roasted carrots & green beans along with spaghetti squash with a basil cashew cream sauce. I’ll be posting the recipe for this one soon, it was SO yummy!
Hope everyone is having a great week, it’s almost halfway over! The weekend will be here before we know it!
