Hey guys! Long time no speak! Sorry I didn’t get a chance to drop in for What I Ate Wednesday last week, I was busy packing for our trip. We just got back from an insane trip to Vegas. It was my first time and we had a BLAST! It certainly didn’t hurt that we were there with 15 awesome people.
So I know you’re going to ask if I gambled. Yes, I did. I gambled $4 in the penny slots and I lost it ALL. Thanks Vegas. I’m pretty daring, I know. I was going to stick to $2 but I just couldn’t help myself and kept going & going… I think I was confusing people when I screamed with excitement over winning 10 cents, but whatever, it was fun for me.
It was a completely different world. It was like we were in this little bubble with different rules and a different landscape. Drinking in public? Cool. Smoking in Buildings? Not so cool. People throwing money into the pool just because? People not so cool but cool for us.
We went for a bachelorette party and it was a ton of fun. We totally pretended like we were ballers. Hey, it’s fun to pretend every once and a while right?
I did so much excessive drinking and eating while I was there I was excited to get back to some fresh food and home cooked meals. SO, let’s take a look at my eats for the day for What I Ate Wednesday!
I burned over 800 calories at boot camp this morning so I needed a hearty breakfast. I got seriously messed up from all the smoke in Vegas, I was in rough shape during the workout this morning. I can’t even remember the last time I’ve had an asthma attack but I was wheezing halfway through the workout. I’m hoping this will get better soon, my lungs are NOT happy. So for breakfast I had the usual egg white scramble with salsa and spinach.
For lunch I had a little leftover salad and some Indian Jaipur Vegetables over quinoa.
I was thoroughly impressed with the ingredient list on this one. Look at all those things. They are real, whole foods that you can understand and say. Plus it was freaking delicious.
For a snack I had some sheep’s milk yogurt with granola. Yum!
For dinner I made acorn squash stuffed with sausage, quinoa, spinach, onions and tomatoes. It was super tasty. I was so confused when I walked into the store and the entry was filled with apples & squash. Where am I? Was I seriously only gone for 4 days? It’s ok, I’m ready for it. Bring on the fall! Pumpkin, squash and apples, here we COME!

I was so excited to see Oto when we got home, I couldn’t wait to go pick him up, it was the highlight of my week so far. He licked the crap out of my face. It was awesome
