Ugh. You know how I posted yesterday about needing to get back on track with eating healthy? Well that point was just punctuated by my annual physical yesterday. My doctor says to me “You’ve gained weight, what happened?” Ummmm, I ummm, yah I don’t know, I just did. I told myself it was because last time I was there was right before our wedding when I was in the best shape of my life, but what excuse do I have for not staying there? None! Nunca! Nada! I’m actually glad that happened, just gives me that much more motivation to get back on the health wagon (as if being in Vegas in my bathing suit and tight dresses wasn’t enough).
For lunch I had some vegan chili and a spinach salad topped with tomatoes, peppers, guacamole & some leftover bulger wheat. I made a strawberry vinaigrette to dress it up a bit and it was DELISH!
For a snack I had some carrots and peppers with guacamole. Apparently I was being haunted by guacamole today because it made an appearance at dinner too
Dinner was some fresh swordfish with a tequila lime spice rub and a mini version of the lunch salad.
Overall, it was a pretty good day of eating although I should probably cut out the toast if I want to lose some lbs. Also might need to work on my portions. That’s a big piece of fish!

WHAT MAKES ME HAPPY:
We picked a TON of blueberries while on vacation. It was so relaxing and beautiful to be out in the field picking those beautiful sweet berries from the bushes (and of course eating some along with way).
I have a 5 lb bag in my fridge that is currently screaming at me to make something with them. The trick is trying to come up with something that doesn’t involve words like “pie, crumble, or jam.” Eeesh, any ideas? I’m thinking maybe a blueberry peach sauce to put over yogurt? Yah, I think I’ll do that. Stay tuned!
