Sorry I went MIA for the past few days, I’ve been crazy busy with work, yah I know, same old story right? Ok, we don’t have to talk about that anymore. Let’s talk about yummy food and great weekends! yay!
I went to NH this weekend and hung out with some girlfriends, we put together a goofy video making smoothies and dancing with Kale. I’ll be posting it on the blog tomorrow for you all to see. We even got some hilarious outtakes with the dog biting our toes and trying to eat our kale while we danced. Yah it was kind of weird to tell people I was going to NH to dance with friends. And Kale. But isn’t that what makes close friends so great? You can get completely goofy and make a fool of yourself and it’s all ok. They’ll still love you anyways.
After our afternoon of Kale dancing I went over to North Conway where I met Tom & we stayed with some friends at their ski house. We enjoyed a nice night out to dinner and then spent the day on Sunday skiing. The conditions were fantastic, the weather was nice and the company was great! Overall the perfect weekend (if you were to delete the drive home). I pretty much spent the entire 3 hour drive home screaming expletives at my google maps app because it had NO idea where we were going. I probably would have been better off following the stars (on a cloudy day). It would literally have me take an exit off the highway, get BACK on the highway going the opposite direction only to get off the next exit and then start going the way I was originally going. If the damn thing wasn’t connected to my phone, I would have thrown it out the window.
Anyways, it’s Wednesday and it’s time to start thinking about the next weekend, not LAST weekend. So let’s talk about some food shall we?

I found some beet juice at the store last week so I decided to switch it up this morning and replace my usual green monster smoothie with a RED monster smoothie. It was delicious!! I’ll post the recipe for this soon.
It’s kind of funny that the day we GO GREEN for What I Ate Wednesday, I go red. But I’ve got plenty of other green things in my day so keep on reading…
For a mid-morning snack I had a protein ball along with some nuts & dried fruit.
I was incredibly hungry while I was preparing my salad for lunch so I snacked on some peppers & guacamole.
For lunch I had a massaged Kale salad topped with beets, peppers, hummus & guacamole, along with a side of leftover mashed cauliflower.
For my afternoon snack I had an apple dipped in some almond butter & coconut. You can see the little snack stalker back there too.
Dinner was a little more kale salad along with mashed sweet potato and a lamb loin chop. It was my first time cooking a lamb chop and it was delicious! I just covered it in a mixture of salt, olive oil, fresh garlic and rosemary and then seared it on each side for about 3 minutes and finished it in a 400 F oven for 5-10 minutes. Yum!
WHAT MAKES ME HAPPY:
It always makes me laugh when I pause the TV and I catch someone in some really horrible facial position. I’ve seen occasional photos of me when I’m making a stupid face like this. Doesn’t it scare you to know that at one point in time, you actually looked like that? It may have only been a second, but still. Scary.









Mai-Lis, It was so much fun being goofy with you and Laurel this weekend. I felt like we were back in the studio again and no time had passed at all! Keeping the laughter going and allowing your inner goofiness to shine is good for the soul
And, your food choices look so full of nutrients, I’m sure you are going to continue to be a true role model for those who follow your blog.
As for the GPS, Jeff and I were in Chile a few years ago with friends trying to make to an airport in Pucon using the rental car GPS. As we traveled further and further into a teeny tiny neighborhood, I kept telling the men (who wouldn’t/couldn’t ask for directions with language barrier) that we were not going to the airport. We finally reached the end of the road, facing directly into a horses ass at the edge of river somewhere in Chile! The GPS said that we had reached our destination and we all burst out laughing until we had tears in our eyes.
HAHA, that is hilarious! You had me laughing when I read this. I agree, I had a great time with you guys this weekend, let’s do it again soon!
I have a little snack stalker too that likes to photobomb my food pictures. Haha. I always have to photoshop her out!

It all looks yum, as usual, but I am cracking up at the paused tv comment. I always do this. I usually go get someone else in the family to laugh at it with me. Glad to know I’m not the only one.

Love the doggie photo bomber! I’ve often thought about that whole “weird facial position” thing. It’s just a good thing people can’t hit a pause button whenever they please, because I have a feeling my face would look pretty funny sometimes!
Oh my gosh I absolutely love that picture of your apple and pb because of your dog in the background- such a cute little pup. Funny that you should post that snack today because I just mentioned my new thing for red apples and almond butter in my WIAW! I love the idea of topping the almond butter with coconut though- I’ll have to do that next time! Great minds think alike…
