WIAW #22, Good Eats & Stress

Why does it seem like Tuesdays are always so stressful? I’ve been completely slammed with work lately and can’t seem to get ahead of things.  The second I check one thing off the list, another one is getting added.  Despite having a stressful day, I actually had a really good day of eating which is surprising.  I wasn’t that hungry despite the fact that I burned 500 calories at boot camp this morning and then another 690 calories during Zumba.  It’s probably one of the best days of eating I’ve had in a long time.


Ok, here we go!

Breakfast

For breakfast I had an avocado & salsa omelette with a green smoothie.

Lunch

For lunch I had a massive salad with spinach, grilled vegetables, guacamole & salmon drizzled with some olive oil and balsamic vinegar.

Snack

For my snack I had some sliced peppers, guacamole, 1/2 a passion fruit & some veggie chips.

Dinner

I wasn’t that hungry when I came back from Zumba so I had kind of a strange dinner: A few olives and some leftover black beans,  roasted squash & beets.

Overall, a very colorful day of eats!

 

WHAT MAKES ME HAPPY:

That moment in the morning when I open up all the blinds.  I take a few minutes to look out over the water & take a few deep breaths before starting my day, it’s always one of the most relaxing parts of my day.

      My usual is a few fresh strawberries, a banana, a pear, frozen pineapple, shredded coconut, water, 1 date, cucumber, kale & spinach, sounds like a lot but its SUPER delicious! It makes 2-3 smoothies so I can share with the husband or have one the next day :) What’s your latest favorite smoothie?

  2. That omelet looks seriously delicious. Avocado, salsa, and eggs make for a fab combination!

  3. That salad looks great! The passion fruit looks interesting. My favorite flavor Chobani is passion fruit, but i have never actually eaten one.

      It’s a little tarter than I thought it would be, it wasn’t bad but it probably needs some added sugar to mellow out the sour taste. I saw them at the store the other day and they just looked so pretty I had to buy some! :)
