WIAW #21, A Yummy Day

Happy Wednesday!  Know what I love about blogging? (among many things). I can pretend that it’s another day.  Like now. I’m pretending it’s Wednesday and there are only 2 more days left before the weekend, wooohoo!! But I’m really writing this on Tuesday (sshhh, don’t tell anyone).  I’m over Tuesday, it was a good day but I’m ready for Wednesday.  So let’s make it “Wednesday,” better yet “WHAT I ATE WEDNESDAY!”


Breakfast

For breakfast I made an egg white scramble with zucchini, salsa & guacamole alongside my normal green smoothie.  I’ve found that the green smoothie does it for me on days I don’t workout but when I have boot camp in the morning and burn over 500 calories, the smoothie just doesn’t do it so I have to eat something else in addition to it.  Is that a big enough “side” for you?  Hey, it’s all good stuff!

Snack-Morning

For a snack I had a few chocolate covered almonds because I was stupid and I bought them. And when I buy them I eat them. So I ate them. A lot of them.  The sooner I eat them the sooner I don’t have them to eat.  Right? Isn’t that how it works?

Lunch

For lunch I had some leftovers, I’ll be posting the recipe for this soon.  It was basically a deconstructed eggplant parmesan stew that I made in the slow cooker.  It had all the goodness & flavor of eggplant parm but without all the pasta & “frying” but there’s much more to talk about on that so we’ll come back to that when it’s time.

Snack-Afternoon

For my snack I had some carrot sticks which I dipped in guacamole & almond butter.  I saw Tom dipping carrots in almond butter the other day and looked at him like a crazy man but then he gave me one and I retracted my crazy eyes.  It’s good! It’s a really great vessel to get almond butter in your mouth.

Dinner

For dinner we had roasted carrots, mashed spicy basil cauliflower & St.Louis ribs with blueberry BBQ sauce.  I cooked the ribs all day long and they were SO GOOD!  Tom said we should make it Rib Tuesday from now on.

WHAT MAKES ME HAPPY:

Tulips.

Flowers

They have to be one of the happiest flowers out there.  They remind me of spring – oh how I would love me some spring right about now!  Tom brought these home this weekend and an instant smile came to my face.

      Haha, thanks Sonja!! I’d be happy to do that day of eats over again, can’t wait for the leftover ribs for lunch today :)

  4. Flowers makes me happy, too, and my favourites are orchids. Even better when they’re given to you by somebody else! Tom surely knows how to brighten your day :) .

      OMG, I love orchids too, they are the best! I had a real one and I killed it so I got a REALLY good fake from Pottery Barn so I can pretend like I have a real one now :)

  5. One of my favorite snacks when I was younger was baby carrots and peanut butter. Please tell me you’ve tried that at least! :D Haha.

      You know what? It’s very possible that I have never had the combination before. I’ve had peanut butter & celery before, you’d think the carrot wouldn’t be too far away but apparently I was in the dark for WAYY too long! What is wrong with me?? Don’t worry, I’ve seen the light now.

    This sounds totally wacko but I love carrots and Teriyaki Sauce. So good. I agree with chocolate almonds being totally addictive. I now I have a strong need to go buy some;)

      That doesn’t sound wacko, that sounds awesome! I’ve been making a lot of roasted carrots lately, now I’m imagining roasted carrots with Teriyaki sauce, yum!
