Hey All! Hope everyone is having a good week digging out of all that snow out there. If you live somewhere warm and you don’t have any snow and the sun is shining, I don’t want to hear about it. The beauty of the snow has passed and the brown snowbanks and slush-covered roads have moved in. I’m over it. NEXT SEASON PLEASE!
Looks like it’s Wednesday again! Jenn is hosting “Love Your Veggies Month” over at Peas & Crayons, go check it out.

Ok, let’s get on with this.
For breakfast I had some strawberry almond overnight oats. Made with greek yogurt, almond milk, chia seeds, rolled oats, almond extract, sliced strawberries & sliced almonds. Delicious!
For lunch we did Korean so I got one of my absolute FAVS! Bibimbop, or however they choose to spell it. I don’t have the energy to go google that right now so deal with it. I crave very little foods but strangely enough, bibimbop is one that I crave. Yummy meat & vegetables topped with an egg, how can you go wrong?
I got home late so I threw together a quick dinner. Sweet potato topped with some leftover taco veggies, salsa & guacamole.
Thanks again Jenn for hosting!!
WHAT MAKES ME HAPPY:
The new Boston radio station 96.9.
Thanks Alex for letting me know about this one! It made my hour and 45 minute drive this morning bearable (especially since it should have only taken 30 minutes). The station plays all sorts of throwbacks, new hits & tons of songs that I used to listen to college. I jammed out to Ashanti, Puff Daddy & Ja Rule on the way home, lovin it!!

The korean lunch looks to die for! I love korean food and especially bibimbop, but where is the rice? And where is the stone pot it usually comes in?
It really was to die for! It was take-out so I guess they didn’t want to part with one of their sweet bowls
The rice was packed separately, I didn’t eat much since I have my weigh-in for our challenge tomorrow
Oh! That radio station sounds totally awesome! And I use the Tune In app on my phone, so I can play radio from anywhere in the world. I’m totally using that for my next workout.
Oh wow, that sounds AMAZING! I’m totally going to download that app, thanks for letting me know
I’m a first time visitor of your blog thanks to WIAW.
Love your blog name! And, I love me some Korean food! Your lunch looks amazing.
Thanks Ali! Can’t wait to check out your blog too!!
Ooh, a taco sweet potato is a great idea! I’ll have to try that some time!
Can I please have your lunch and dinner.
Yummy
I love throwback radio stations. On my 2 hour rides home from school I just flip through every single channel until I hear a song I like. This continues for the entire drive
Mostly I’m on country though.
Your sweet potato looks delish! Happy WIAW
