WIAW #2: Happy Breakfast

Here we are again, it’s Wednesday already!  Seriously, where are these days going?  Its freakin OCTOBER! When did that happen? My god!  Before we know it we’ll be hanging the stockings and playing Christmas music (can’t wait).  I have to admit, I have some Christmas songs that come up occasionally on shuffle and I may or may not listen to them anyways. Yes, I’m a Christmas music freak, but more on that later.

So yesterday morning we had one of those, crawl-back-to-your-car, never walk again, kill me now workouts.  My legs were shaky all day, I literally slid down the stairs on my butt a few times because I felt like they might give out on me.  SO, I needed some hearty meals to keep me from getting too ravenous after that craziness.

I started off with a big (happy face) breakfast.

An ezekiel english muffin (one with almond butter & cinnamon and the other with melt), along with an avocado & salsa egg white omelette.  Yum!

It was filling enough to take me through to lunch without any hunger pangs.  I was even able to cook my lunch without snacking on everything in sight.  And it was SO worth the wait!

I roasted up some butternut squash, caramelized some onions and stirred it all together with quinoa, spinach, spices, goat cheese & toasted pecans.  The was absolutely delicious! My only regret is that I didn’t make more, I want some leftovers!!

For my afternoon snack I was a little naughty and ate a spoonful of peanut butter.  I was heading out the door and I wanted something quick that would fill me up and nothing else was speaking to me.  I opened the refrigerator door 5 times hoping that there would be something new there when I opened it up again.  Didn’t happen.  So then this happened:

For dinner I made some spaghetti squash with spicy tomato sauce and roasted broccoli. Delish!

Today, I wanted to share this food log with you in case you’re looking for a nice organized way to keep track of what you’re eating.  I found this a long time ago somewhere and I’ve altered it slightly to work for me, feel free to print some out and use them.  I’ve tried those apps and online logs like My Fitness Pal and they were great until I stopped eating processed foods and cooking more.  I found it much more work to enter in all the ingredients of my homemade meals so I’d prefer to just write it on a piece of paper so I can see the entire week when I’m done.

I’ve gained 5-10 pounds over the past few months somehow so I’m trying to get back on track and get down to my goal weight.  I’m always so good at eating well during the week and then I just let it go on the weekends.  I’m going to make a concerted effort to make better decisions (weekends and all!)  We’re doing this fun competition at boot camp so I’m sure that will help me stay motivated on the fitness end, now I just need to hold up my end on the nutrition front.

Hope you can get some use out of the food journal!  I just keep a 3 ring binder with a bunch of them in there and keep one on my desk so I can fill it out throughout the day.

  2. Your lunch looks so good! I’d definitely be craving leftovers of that. I also really like your food journal template – simple, but effective. So many of the online tools are geared toward processed foods, as you said. I much prefer seeing everything laid out the way you’ve set yours up. I’m sure that’ll help you get back to your goal weight, along with the intense workouts. 🙂

      Hi Lauren! I will try to update it soon if I can! I agree that Sunday should be in there, I think when I created it for myself it was a space issue and I always forgot to log on Sundays as I was out & about so I left it out. I’ll let you know if I upload a new one! thanks!
