WIAW #19, Veggie Mania!

Breakfast

So for the past few days I’ve been shoving tons of fruits & vegetables in my face at every meal and know what? It feels great!  I’m full and energized and don’t feel bloated.  On Sunday I bought 2 huge containers of spinach, a head of kale, some avocados, an eggplant, some carrots, zucchini, peppers, asparagus, tomatoes romaine & beets.  And know what?  It’s two days later and we’ve almost gone through half of it.  The amount of spinach we go through on an average week is enough to scare someone.

Well, I guess we’re here again! What I Ate Wednesday, wahoo!!  How appropriate is it that Jenn picked this as “Love your Veggies Month?” I wrote this post before I even knew!  I have to secretly share that I love Wednesdays so much because I don’t have to post a recipe, I can just snap a pic of whatever I eat and post it!  As much as I love sharing all of my creations with you, it’s a lot of time and work to upload photos and write recipes.  Not today! Just “check this out” baby.

MorningSnack

So we’ve been doing this thing at boot camp where we did timed workouts for the whole month of January and now we’re doing them over again trying to beat our times.  Last time I did today’s workout in 21:56, this time I finished it in 17 minutes! wahoo! It whooped my ass but it felt good.  I guess the morning green smoothie wasn’t enough to keep me full so I had a mid-morning snack (above).  I took two dates and stuffed one with coconut cream (that yummy stuff at the top of coconut milk), and I stuffed the other one with almond butter. Yum! Especially the coconut one.

Lunch

For lunch I had a huge spinach salad topped with tomatoes, beets, bbq shrimp, guacamole, hummus & some leftover squash salad.  I’ll be sharing the squash salad recipe soon, it has a coconut cream sauce on it (heavenly).

Snack

For my afternoon snack I kept with the coconut cream theme and whipped it with some almond butter and then topped a banana with that and some shredded coconut.

Tea

I recently heard of Dandy Blend tea from Amanda @ Pickles & Honey.  I stumbled upon some this weekend and decided to pick some up.  So, what do I think?  It’s pretty damn good!  They say it tastes like coffee which I have to agree, but I like really strong coffee so to me it tastes like a crappy cup of coffee. SO, I prefer to think of it as tea.  As tea, it’s pretty good.  I mixed it with some pomegranate tea this afternoon and sweetened it using some date syrup.  Yes, date syrup.  I don’t want to let the cat out of the bag just yet because I’m so excited to share this with you I don’t want to spoil it. So stay tuned, hopefully tomorrow I’ll have it up and you can find out what this is all about.

Dinner

For dinner I made some sweet potato hash topped with roasted veggies, an egg & some nutritional yeast. Delicious!  Overall, a great day of eats!

When dogs sit in cars like they’re driving.

Dogs

I was about to pull out of my parking spot at Whole Foods this weekend when I happened to look next to me.  These 3 dogs were waiting patiently in the car for their owner.  There was the “mom” dog in the front seat driving and if you look closely you can see the two kids sitting quietly in the back seat.  I loved that there was another passenger seat available but the two other dogs decided to stay in the back.  HA, LOVE IT! So damn cute!

  1. Isn’t spinach just the perfect food? I am always so sad when they don’t have it at the grocery store. Love to have it for salads, put it in my wraps, make a green smoothie or just stuff my face with some steamed-garlic spinach. Funny when I think about how I hated everything green as a child.

      Yah, they say it’s a great substitute for people looking to kick their coffee habit, it’s caffeine-free and good for you! I’m going to make it a part of my daily drinking schedule :)

    The other day I saw a little Maltese dog helping her mom “drive” her car – she had a little pink bow in her hair and was totally enjoying the open window!

      Thanks Addy! HA, that’s awesome, love it! I’m always amazed that people can drive with dogs on their laps, my dog would be jumping around and flying out the window :)

  7. Coconut cream-stuffed dates is an awesome idea! I usually just do peanut butter but I’m definitely trying coconut next time!

  8. Glad you like the Dandy Blend! The first time I made some for my husband, he also commented that it tasted like crappy coffee! haha He likes his coffee super strong (like Starbucks or Peets), so I think it’s better to consider it a tea if that’s your preference. :)

    I can totally relate to the veggie mania. I have practically been living at the farmers market. Doesn’t it feel great though to know how much good you’re doing to your body by eating all the greens? It surely makes me feel that way. :)

  10. love your eats. I have been trying to do a lot of veggies too lately and juicing has helped me a little bit in that aspect. I feel great and less bloated like you mentioned which is awesome. I have to try that Dandy too as well. And excited to hear about date syrup.
