Happy Wednesday everyone! Not sure about you but I’m all messed up this week, I keep thinking today is Monday but then I realize it’s Tuesday and then I slightly freak out when I realize tomorrow is Wednesday (although I realize today is ACTUALLY Wednesday because that’s when you’ll be reading this).
Do you ever have those days where you feel like ALL you do is add to your to-do list and don’t seem to get anything checked off? Today was one of those days! I thought I would come back from the long weekend, dive into some projects & start making a dent in my to-do list but I’m pretty sure all I did was add a billion things. I felt so overwhelmed by it that I pretty much spent my day trying to digest everything, respond to emails, and create my plan-of-attack. I hate those days! Tomorrow will be an ACTION day!
Ok, so enough stressing, here is my day of eats for What I Ate Wednesday:

For breakfast I had a green smoothie (blueberries, cucumber, kale, spinach, pineapple, avocado, banana & water), 1/2 a grapefruit and some greek yogurt with strawberries, blackberries & coconut. It was delicious! I’m sad this instagram photo didn’t capture it great, it was very colorful!

For lunch I made a big ass salad with some mixed greens, kale, roasted beets, steak, guacamole, hummus & a hard-boiled egg. It was delicious! I’m totally digging hummus in my salads lately, it makes it taste all creamy & decadent without some fatty dressing.

For my snack I had a banana (no cute way to photograph a banana).

For dinner I made some coconut cashew chicken in the slow cooker & served it over bulgur wheat. On the side we had a cucumber, tomato, avocado, parsley & feta salad (not unlike that amazing dip I posted a while back).
Not only did the chicken make the house smell AH-Mazing all day but it was crazy delicious too! I went to a meeting this afternoon and as I was coming back to the house, I literally smelled it as I walked up our front steps, before I even opened the door. Now THAT’S what I call a dinner! Plus it was super easy and will make you look like a talented chef when all you have to do is dump a bunch of stuff in the slow cooker. I’ll try to post to recipe for this tomorrow.

WHAT MAKES ME HAPPY:
Snow Days!!
Which was totally NOT what today was, but I couldn’t help but remember that pure joy you used to get as a kid when you woke up and realized that not only was school closed but you had a yard full of white happiness to go jump in.
If you live in the Boston area, you know that they predicted a MAJOR storm last night, like red alerts flashing across my phone screen and news stories about people stocking up at the store. Then guess what? This (above) is what we woke up to. I’m sorry, I thought you said 6-12 inches? Does that look like 6-12? Hell, does that even look like 1″? Nope! Nothin! I felt completely deflated when I woke up. I work from home so it doesn’t mean a snow day for me but I felt so sorry for all those children that went to bed with visions of snow days dancing in their heads. What a bummer!

I *LOVE* New England during the fall, but I can’t handle the snow! I’m from SC so we never really had “snow” days. We’d always miss school because of hurricanes! I do distinctly remember the first time I experienced real snow. It was in 1989 after one of the worst hurricanes Charleston had ever experienced (Hugo), and it snowed buckets that year! It was pretty exciting, and I cherish those memories.
I occasionally love a good blizzard but 80% of the time I’m jealous of your weather in the south, it just drags on SOOO long! That must be exciting to experience snow in a place that never gets it

I love grapefruit in the morning…not the cutting part but it’s worth it. What a beautiful snowy morning!!
Cutting it is the WORST! To be honest, that’s why I only had half, I was too lazy to cut the 2nd part

I loved blizzards when in grade school almost solely for the reason that it meant school was cancelled. Now that I’m in college and there is no chance for a delay/closing, Bring on the Heat!
Typical Boston weather. I remember when I went to college there that I used to always hope it would snow and we wouldn’t have to go to class. Only one time it was cancelled, which was awesome because I had a ton of work due that day!
Yummy eats, especially the chicken! We have some snow here in Toronto and FREEZING cold weather, like -25! not fun!
