Spinach Artichoke Turkey Chili

So.  You know what happens when you spend your entire day working and doing absolutely NOTHING else?  You don’t really have anything to talk about.  Pretty much the only thing that happened to me yesterday besides work was this food. Luckily it’s WIAW so let’s talk about the food, shall we?

Breakfast

For breakfast I had a small green smoothie and some plain greek yogurt with chia seeds, strawberries & pomegranate seeds.  It was delicious.  Umm, can we just talk about how strangely delicious the strawberries are right now?  I usually never buy them out of season like this but I picked some up at Whole Foods this weekend and holy good lord are they amazing!  Is June here and nobody told me?  I WISH!

So I was feeling all good about having a light breakfast.  Until 10:30 rolled around.  Apparently my yogurt and small smoothie didn’t fill those 500 calories I burnt at boot camp this morning, my stomach was literally singing the national anthem.  So I shut it up by shoving some poop impersonators into my mouth (otherwise known as almond butter & a pecan pie energy ball).  There is a comment selection down below so please leave your poop jokes there (nothing is off-limits).

For lunch I had some leftovers from last night (Spinach Artichoke Turkey Chili).  I don’t know how, but this was even better the 2nd day!  I’ll be posting the recipe for this bad boy soon.

For my afternoon snack I had another ball, a sliced pear and a handful of popcorn.

I needed to make a quick dinner and this fit the bill.  It was done in about 10 minutes.  Some grilled sausage, a sweet potato & warm cabbage apple slaw. Totally hit the spot!

Sorry to be boring today, I’ll be happier next week, I promise!

Afternoon playtime.

Who says you can’t have recess as an adult? Oto & I have recess every afternoon after lunch.  It’s usually a walk but lately we’ve had to improvise because of the crappy weather.  It now consists of me chasing him around trying to grab the ball out of his mouth, I really hope no one can see in the window because I probably look like a total freak running around and laughing by myself.

As much as I usually just want to get back to work, it’s fun to get this little play time in my day and pretend I don’t have a million emails sitting on my computer upstairs.

    Boring?? That was a taste feast in my eyes! I loved the look of that breakfast and would surely eat those little poop impersonators if I was not allergic to pecans… Almonds could be substituted I imagine?

  7. Hey Mai-Lis! New reader here, but I love your blog! I was wondering what your recipe is for cabbage slaw? I have a head in my fridge that needs to be used….

      Hi Addy, thanks so much, so glad to have you! I just sautéed the cabbage in a wok with a little coconut oil, bacon pieces and sliced apples. Cook for about 5 minutes until warm & slightly wilted. Then toss in your favorite vinaigrette, I used some olive oil, apple cider vinegar & honey mustard. It was delicious!

    I had strawberries this morning too and they were ridiculously good! And giant. It’s a little perplexing but I won’t ask questions.
    Also, your dog is adorable!!
