Guess what? I finally got back to taking a dance class last night for the first time in 4 years. This seems pretty crazy to me because I used to dance 4-5 days a week from the time I was 4 years old and I continued until I was 24. I danced all through high school and then in college I started a dance team and also taught at a dance studio. When I moved up to Boston, I never made the effort to find a new dance studio and here we are, 4 years later! It felt so great to put those dancing shoes back on and get all sweaty! I still suck at hip hop but it was a blast and I’m looking forward to taking more classes.
Speaking of dance…
After making those quinoa burgers yesterday, I had visions of quinoa dancing in my head as I went to bed. So I decided to jump right back into quinoa world in the morning and make some breakfast quinoa, yum!
Start off by toasting some almond slices…
Then just heat up the quinoa with the other ingredients in the microwave or on the stove and you’re ready to go. It might even be quicker than oatmeal. I suppose you could make the quinoa in the morning but I suggest using some leftover quinoa because who seriously has an extra half hour in the morning to simmer quinoa? I know I sure don’t, and I work from home!
I bumped up the almond flavor with a little almond extract, but if you don’t have any you could do without it, or substitute some vanilla extract.
I have to admit that I still prefer my oatmeal, but it was nice to switch things up a bit and it was quite tasty!

All you non-dog lovers out there, you might want to start skipping this section because there is a good possibility there will be a picture of our dog up here. Why? Because he makes me laugh every day and laughing = happiness. I don’t have the pleasure of working with an office full of people so I rely on Oto to get my entertainment and he always delivers!
This is a picture of what he does when we come inside after our lunch-break walks. He doesn’t gently lay down, he just collapses and lays like this for a couple minutes before getting back up again.

Toasted Almond and Blueberry Breakfast Quinoa

Ingredients
- 1 cup cooked quinoa
- 3 tablespoons unsweetened almond milk
- 1 teaspoon maple syrup
- drop almond extract
- sprinkle cinnamon
- toasted almonds
- blueberries
Directions
| 1. | Stir the first 5 ingredients together in a bowl. |
| 2. | Heat up on the stove or microwave for 1 minute 10 seconds. |
| 3. | Top with blueberries & sliced almonds and enjoy! |

I’ve been wanting to try quinoa for breakfast. I think I’ll give your recipe a try!
Nothing better than tired dogs right? Let me know how it turns out! I thought it tasted really good, it’s just the texture of quinoa that I wasn’t used to for breakfast but I think it could grow on me. I might try to add some greek yogurt to it next time to give it a little more creaminess.
or why not mix it with your outmeal if you don’t get used to the texture? you’ll add some protein and nutriuents by adding the quinoa to your oatmeal. I love quinoa any time of day so I am going to try this recipe. Thank you!
