The BEST Chicken Meatballs. EVER.

With all of the crazy things I’ve cooked throughout the years, can you believe that I’ve never made meatballs?? I know, what is up with that??  SO, I decided to give it a try and these babies were SERIOUSLY delicious  (hence the “BEST” meatball header).

They were moist and flavorful and full of possibility!!  I’m sure they would have been great with some tomato sauce over pasta as well but I decided to mix things up a bit.

I served the meatballs on some whole wheat naan bread with tomatoes and tzatziki sauce.  A litte high on the messy to eat scale but also high on the yum holy delicious scale.

I used some rolled oats along with some breadcrumbs to bind the meatballs and a little greek yogurt to keep them moist.

I used a silpat liner for easy cleanup but its not necessary.  I’m sure you could make these with ground beef or turkey as well, I’ll be giving that a try some time.

Luckily we had some leftovers to enjoy the next night.  I was having a stressful busy day so Tom took control of the kitchen and made these AMAZING mini meatball pizzas with spicy tomato sauce and feta cheese.

If When I make these again, we might have to go straight to the pizza recipe.  I told him as I was finishing the last few bites that I didn’t want it to end.  Do you ever have those meals that are so delicious, you get sad when it’s almost gone and you won’t be able to enjoy it any more?  Oh meatballs, how I miss you.  Why couldn’t you just multiply and make a million little delicious meatball babies for us to enjoy? Ok, sorry maybe meatball babies sound weird but you get the point.

4 day work weeks.  I know last week I said that 3 day weekends make me happy, but even when they’re gone they continue bringing joy!  A 4 day work week that just flies by!  Today is Wednesday already!! Can you believe it??

Don’t get me wrong, I absolutely love what I do and I don’t mind working, but the weekends?  Yup, definitely enjoy those more.

The BEST Chicken Meatballs

Serves 3-4
Allergy Milk, Wheat
Meal type Main Dish
Misc Serve Hot
Moist savory chicken meatballs. Enjoy on pizza, pasta or a wrap.


  • 1lb ground chicken
  • 1/3 cup rolled oats
  • 1/3 cup panko
  • 1 Large Egg
  • 1 tablespoon Minced Garlic
  • 1 tablespoon Plain Greek Yogurt
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper
  • sprinkle cinnamon


1. Preheat oven to 350 F.
2. Mix all of the meatball ingredients together well in a large bowl.
3. With wet hands so the meat doesn't stick, form meatballs into desired size and place on a baking sheet.
4. Bake for 25-30 minutes or until cooked through.
