Spinach Artichoke Turkey Chili

Who doesn’t love Spinach Artichoke dip?  And who doesn’t love chili?  Well, I guess those people won’t like this.  But if you like either of those things, you’re going to love this creamy chili goodness.

It actually happened by accident.  I was really in the mood for chili the other night and I had some ground turkey but when I opened the cabinets, the only beans I had were chickpeas.  And then. As if sent from above, I saw the can of artichoke hearts right next to them.  Lightbulb!

You could also use white beans for this if you have them.

Ok, so it doesn’t have all sorts of mayo and pounds of cheese, but it still tastes freaking delicious.  You could even dip some chips in it, I’ll allow it.

Spinach Artichoke & Turkey Chili

Serves 4-5

Ingredients

  • 1-1.5lb lean ground turkey
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 1 can cooked chickpeas or white beans (15oz) (drained & rinsed)
  • 1 can (14oz) artichoke hearts (drained & chopped)
  • 1 Medium onion (diced)
  • 1 tablespoon butter
  • 2 tablespoons whole wheat flour
  • 1 tablespoon minced garlic
  • 1/2 cup skim milk
  • 6oz plain greek yogurt
  • 2 tablespoons grated parmesan cheese
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 2 handfuls fresh spinach

Directions

1. Heat a large dutch oven over medium high heat and spray with cooking spray. Add ground turkey and cook until nicely browned & cooked through. Season with salt & pepper and remove with slotted spoon to a bowl and set aside.
2. Add butter and onions to the dutch oven and cook for 5 minutes, stirring occasionally. Add the garlic and cook for another minute.
3. Add the wine and deglaze the pan scraping up all the bits on the bottom. Slowly whisk in the flour and continue stirring constantly for a minute. Slowly pour in chicken broth whisking constantly. Add the remaining ingredients (except greek yogurt & spinach) and bring to a boil. Reduce to a simmer and continue cooking for 5-10 minutes.
4. Before serving, stir in greek yogurt and spinach until wilted.
