Sorry for the little hiatus this weekend, we were busy preparing & cooking for a big party we had on Saturday. It was a lot of fun, full of great friends, food, drinks & fun. I came up with a bunch of new recipes for the party but unfortunately I was too busy to take many photos so I’ll have to make them again and post them for you.
This is the spiked blueberry lemonade I made for the party this weekend. Of course I don’t have any photos so I’m showing you photos from our wedding. We made two huge vats of blueberry lemonade for our wedding and it was gone in about 5 minutes. By the time Tom & I made it over to the bar area, all that was left were the lemons and blueberries at the bottom. So I concluded that #1 – It must have been delicious, #2 – I was going to have to make it again. And so I did. And it WAS delicious, and I got to enjoy quite a few glasses.
I always hate adding ice to my cocktails since it waters them down so I decided to freeze a bunch of lemons and blueberries and then added them right before we served it. It makes it look pretty & it cools it down without melting ice. I know they always say to freeze fruit on a tray of waxed paper, but seriously – who has room in their freezer for that? I know we certainly don’t! I always just put it in a freezer bag and lay it flat so that they don’t stick to each other, it works just fine!
It works great if you have a beverage dispenser, but it would work fine in a pitcher as well. I found these really cute striped straws for our wedding at Shop Sweet Lulu.
You could easily adjust the flavor of this recipe by using a different flavored vodka. You could do watermelon, or strawberry, or cherry. It’s so simple it’s ridiculous! I used this great low-calorie organic lemonade I found at Trader Joe’s. You could always use pink lemonade too.
SPIKED BLUEBERRY LEMONADE:
2-3 parts Lemonade (depending on how strong you want it)
1 part Smirnoff Blueberry Vodka
Stir together & serve garnished with lemon slices & fresh blueberries.
This cocktail is great because you can make cocktails for a boatload of people without all of the shakers & messy bar areas, AND its delicious & it only requires 2 ingredients. Now that’s my type of recipe!
BTW – If you’re looking for a fun craft idea for your party or wedding, I made the BAR sign in the photo above. I just took a big piece of wood & sprayed it with black chalkboard paint. Then I bought the big B.A.R. letters at the craft store & glued them on. That way you can reuse the bar sign and just write in chalk whatever you are serving at the time.

Sunsets.
I absolutely love watching the sunset, especially over the water. Who doesn’t though? I took this one last night at the end of our street, it was GORGEOUS!! Happy Monday everyone! Looks like we have a sunny week ahead of us!
