How awesome is spaghetti squash? It looks like a starchy carbohydrate but its ACTUALLY a vegetable, and its good for you, AND it works as a wonderful vessel to get delicious sauces like this into your mouth. Let’s face it. Who loves pasta for pasta? We love pasta because it helps us shove things like cheese and sauce in our face.
So let’s just pretend for a while that we’re eating homemade spaghetti with a decadent creamy, cheesy sauce. Just keep pretending because when you taste this, its exactly how you feel.
Keep in mind that although cashews are a lot better for you than heavy cream, they’re still pretty high in calories so you don’t need much of this stuff. You’ll be full after just a small little serving.
If you want to make it vegan you can just replace the parmesan cheese with nutritional yeast or just leave it out all together.
My basil has been so happy lately I’ve been throwing it in everything. Its growing out of control and I’m loving it! I’m hoping to whip up a big batch of pesto to freeze before we get our first frost.
WHAT MAKES ME HAPPY:
Hope you all had a great weekend! On Saturday I went for a great 5 mile hike with the hubby and pup. There was this really cool part with a boardwalk on top of what they call a “quaking bog.” It looks like flat land but if you look closer, its floating circles of vegetation on top of the water. How cool is that?
Tom went out with his guy friends on Saturday night so I decided to have a little quality alone time. My night alone took me all of 2 minutes to plan. I was going to go shopping at Marshalls, pick up some Pho at the Vietnamese place, watch Safe Haven and cry on the couch and then cuddle with the puppy. Perfect.
