I made this for lunch last week with leftovers from the Lemon Rosemary Chicken. I decided to wait to post it since I felt like I was only posting about chicken last week. Let’s just say I was chickened out.
Is there anything better than chicken salad made with leftovers from a delicious roast chicken? My mouth is watering just thinking about it. I lightened this up by using a mixture of avocado & greek yogurt in place of the mayonnaise and then I added some crunch with some pistachios. I didn’t even miss the mayo in this, it was SO good! Creamy, rich & delicious!
Tom & I are slightly obsessed with pistachios. Even though they aren’t that bad for you, for some reason I always feel completely guilty after eating them. Maybe it’s because I power through them as if I’m a hoover vacuum and they might disappear if I don’t eat them as fast as possible. Or maybe it’s the pile of shell evidence left when the bag is empty you’re done. I just stare down at the pile and hear it yelling up at me “YES, you really just ate ALL of those!!!”
Anyways, moving beyond my dysfunctional pistachio eating habits, they really do add the perfect crunch and extra flavor in this chicken salad.
For the creamy avocado sauce I just mixed together:
• 1/4 avocado
• 2 Tablespoons plain greek yogurt
• 1 Tablespoon milk
• Salt, Pepper & Tabasco to taste
Then I smashed some pistachios in a little plastic bag using a mallet. You can use a hammer or pan or anything heavy that you have laying around.

I love taking naps outside in the afternoon when there is a nice breeze, it’s so relaxing and I wake up feeling refreshed. Napping inside? Another story. Hate it. I always wake up feeling groggy & disoriented. If I ever do nap inside, I have to be on top of the covers with all the shades open. Maybe I’m missing out on something but for now I’ll stick to my outside naps on the beach thank you.
