Lemon Rosemary Slow Cooker Chicken

People generally think of using their slow cookers when the weather is cold out and they can cook up slow comforting meals.  I tend to think this way too but recently I’ve found it’s also very useful in the summer since our schedules are always so busy and it allows me to have dinner ready on the table in just a few minutes.

I absolutely love roasting chickens in the slow cooker, you literally just plop the entire chicken in there, close the top and 8 hours later you have moist, tender, fall-off-the-bone chicken.  You don’t need to add any liquids since the chicken will release its own natural juices while cooking.

I found this free range roaster chicken for sale at Whole Foods for $7.00 and we’ll probably get 5-6 meals out of it. That’s about $1-$2 a meal, not bad huh?  One of my favorite things is actually the leftovers, it creates this tender almost pulled chicken that is fantastic in chicken salad, quesadillas, on pizza, salads, etc…

Another great thing about making a chicken this way is that you don’t need to have any carving skills.  It just falls apart so you just remove the bones and the chicken just falls apart.  You should have seen me when I made a roasted chicken this winter, I didn’t feel like looking up carving directions so I just hacked away at it using my hands and a knife until it was all off the bones.  It wasn’t a pretty scene.  Dad – you’ll have to give me some lessons at Thanksgiving this year.

This chicken is good with just a little salt and pepper but I decided to make a gravy for it.  Just take some of the drippings from the slow cooker and simmer it in a small saucepan.  Whisk in flour (or corn starch) until it reaches your desired consistency.  To make it richer you can add a pat of butter but I just kept it as is.

MMM, my mouth is watering just looking at this.  I’m looking forward to enjoying the leftovers for lunch the next few days!

We had such a great laugh when I opened this fortune cookie the other day.  I hate the taste of fortune cookies but I love reading the fortunes.  If anyone has the slightest clue what this means, I would love to know.

Lemon Rosemary Slow Cooker Chicken

An easy & delicious slow cooker meal. Just put the whole chicken in the slow cooker & 8 hours later you have tender fall-off-the-bone chicken!

Ingredients

  • 1 roaster chicken
  • 4 whole garlic cloves
  • 4 sprigs rosemary
  • 1 lemon
  • lemon pepper & salt (to taste)

Directions

1. Place the whole chicken in the slow cooker (make sure you remove the little pack of gizzards they stick on the inside).
2. Season chicken with plenty of salt & lemon pepper (optional). Top with the rosemary sprigs and whole garlic cloves. Squeeze the juice from the lemon over the chicken.
3. Set the slow cooker on low for 6-8 hours.
4. Cut away from bones & enjoy!
