Hello long lost friends! I’m back from vacation now, sorry about the spotty posting last week but we were busy enjoying ourselves in Vermont. We had a fantastic vacation, the weather was great, the company was great, and as always the food was great. Maybe a little too great. I got a little too used to having ice cream every night which is NOT good for the waist line. I seem to have lost my way with eating healthy so it’s time to hit the reset button. What better time to start fresh than the Monday after an indulgent vacation?
My brother and I were talking about how we always used to look forward to starting a new school year. You’d get some new school clothes and be all excited about your new style and how THIS semester you were going to be super organized, yada yada yada. Sometimes its just nice to have a beginning point, a time to start fresh, to hit the reset button and start doing things exactly the way you want to do them. Leave any mistakes in the past and look forward.
I got caught up in the whole, “Its summer, enjoy yourself, eat out, eat ice cream, get lazy and order a sub from the pizza place! Have some wine! Have some beer!” Now I’m not saying I’m cutting all of that stuff out, I still have a wedding, a family get-together and a trip to Vegas in the month of August, but I’m going to start making better choices. Choices that make my body happy, choices that allow me to fit into my clothes without feeling depressed, choices like I made today. I know I’m only one day into this new phase but I’m already feeling better and more energized.
I started the day off with a nice long run and watched the sun rise over the water. For breakfast I had some watermelon, granola with blueberries and a piece of ezekiel toast. For lunch I enjoyed some vegan chili and this awesome tomato salad you see here. After lunch I took a nice long walk with the pup and in the afternoon I snacked on some carrots. Dinner was a cucumber salad, salmon burgers (no bun) and tomato basil bulger wheat. I finished off the day with some relaxation with the husband catching up on some shows. I feel so much better taking control of my day and eating foods that fuel me and don’t drag me down.
Let’s talk about this salad for a minute…
This is the perfect example of the summer food I want to be eating. Fresh tomatoes, cucumbers & feta cheese from the farmer’s market mixed up with basil from the garden (which is growing out of control by the way, I see some pesto in our future).
I topped it off with some quality olive oil and this amazing Black Cherry Balsamic Vinegar I picked up while we were on vacation.
Here’s to hoping that I can continue this momentum through the entire month & beyond! To more tomato salads and less Klondike bars! To more runs and less TV! To stress-free days and a happy summer!
