{Healthy} Mint Chocolate Chip Fudge

Healthy?  Say WHAT??  Yes, this delicious treat is healthy.  And that beautiful green color?  No food coloring or artificial dyes, just a nice handful of fresh spinach!

I can’t say that St. Patricks day is a big holiday for us as neither of us are Irish and I’m a little bitter that they are the only nationality that has their own holiday, but I couldn’t pass up the opportunity to create a beautiful green dessert using natural ingredients.  Seriously, why can’t English/German/Polish mixes like me have their own holiday?? I’m going to make one for us!  It’s going to involve lots of spinach! Spinach smoothies, spinach salads, spinach desserts! What do you think? Want to come celebrate with me?  Something makes me think it may not draw as many people as green beer.

Healthy Mint Chocolate Chip Fudge

We were hanging out with some friends last weekend and they mentioned that they had made some paleo fudge using coconut oil and nut butter.  It got me thinking about coming up with my own “fudge” concoction.  Then I came across this awesome recipe from Purely Twins.  It’s as though I was being contacted by the fudge gods, a message sent from heaven.

I used their recipe as a starting spot and then created my own concoction.

Know what is the best about this recipe (after its healthy ingredient list)?  It seriously took me like 5 minutes to blend the ingredients together, a few hours to let it set and then it was DONE.  No baking, mixing, making a mess in the kitchen.  Just a simple amazing dessert recipe.

It doesn’t have the same consistency as fudge, but it was amazing nonetheless.

Mint Chocolate Chip {Healthy} Fudge

Ingredients

  • 2 small bananas (peeled)
  • 1/2 cup coconut oil (melted)
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • handful fresh spinach
  • 2 tablespoons maple syrup
  • 1/3 cup dark chocolate chips

Directions

1. Combine all of the ingredients (except chocolate chips) in a blender and blend until smooth & creamy. Pour into a separate bowl and stir in chocolate chips
2. Line a small dish with plastic wrap and pour fudge mixture in. Place in the freezer to set for about an hour.
3. Remove from the freezer and cut into small pieces. Store in the refrigerator or freezer.

  1. Oh wow this looks yummy; I made a chocolate + peanut butter version similar to this not so long ago and I loved it! So definitely will be wanting to give this mint choc chip version a go.

    I made this immediately because I had to see what they tasted like… Delicious!!! I can’t believe how yummy they are and you really can’t taste the spinach at all. I am keeping them in the freezer for a frozen delight. The chocolate peanut butter one sounds equally dangerous!
