
I don’t think this post could be more appropriate because holy moly am I going to need some energy this week! I’m completely maxed out on projects because of my inability to say no, so basically I’m not going to be sleeping much this week. I apologize in advance if I miss some posts this week. I’m so stressed that my little eye worm has returned. Anyone else have this? Whenever I get super stressed I get this little wiggly thing in the corner of my eye that feels like a tiny worm. Sounds healthy huh?

I don’t know about you but the pecan pie fix I get over Thanksgiving isn’t enough to hold me through the rest of the year. These little guys are enough the curb that craving and also give you a nice little filling snack or some pre-workout fuel.

These are going to come in handy tomorrow morning when I wake up for boot camp at 5:30 and walk like a zombie out the door so I can go clean off my car in the snow. Yay. Can’t wait.

I have to say, I’m pretty amazed at how close these taste to pecan pie considering they don’t have 2 pounds of sugar syrup in them.

Driving back from boot camp or the gym as the sun is rising.

The drive there in the dark when you’re all cold and tired completely sucks, but the drive back as the sun is rising and that feeling of accomplishment is a an amazing feeling.
Chocolate Pecan Pie Energy Balls

Ingredients
- 1 cup raw unsalted pecans
- 12 large medjool dates (pitted)
- 1 scoop vanilla protein powder
- 2 teaspoons cocoa powder
- 1 teaspoon chia seeds
- 1 tablespoon ground flax
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 1/4 cup dark chocolate chips
- sprinkle cinnamon
Directions
| 1. | Add pecans to a dry skillet and heat to medium high heat. Toast the pecans in the skillet for about 3 minutes, stirring consistently so they don't burn. |
| 2. | Add all of the ingredients, including the pecans to a food processor. Blend until everything is combined well. Roll into small balls and store in the refrigerator. |

About how much protein powder? A few jars we have use different size scoops; one scoop is huge {it holds about 5 tbsps of powder}.
Good Question! I would say about 2-3 tablespoons (depending on how much protein you would like in them)
Do you think it would be safe to blend it in a blender instead of a food processor?
Hi April, I can’t say for sure because I’ve never tried it, but I assume if you have a strong blender like a vitamix it could definitely work!!
