So lately I’ve been hanging out a lot with this girl Cauliflower. She’s like really cool but totally humble, she’s not all out there screaming how amazing she is like Kale. She quietly sits in the background and comes out with all this good stuff without even trying. As always, I’m also really close with my old bestie, Sweet Potato because she’s always been there for me (and I had a big blowout fight with white potato & we don’t talk anymore, but don’t tell her that!). SO, I decided to join these two budding friendships together and throw a big party the other night. A Chipotle Party to be exact. Let’s just say we all had a lot of fun.
Sometimes, cauliflower can be a little boring on her own but when I added Sweet Potato into the mix, she completely came out of her shell!
I’m a confident person and I don’t mind sharing my friends, that’s why I’m sharing them with you today. I just hope you appreciate their company as much as I did.
WHAT MAKES ME HAPPY:
I love seeing the ocean all calm. It’s usually really windy with big waves on the island so it’s so cool to see the water still like a lake. This is a picture I took on my run yesterday. So pretty!!
Chipotle Cauliflower Sweet Potato Mash

Ingredients
- 1 large sweet potato
- 12oz cauliflower florets
- 1 tablespoon coconut oil
- 3 tablespoons milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon chipotle powder (or a few drops tabasco chipotle)
- 1 tablespoon franks red hot
Directions
| 1. | Wash the sweet potato and poke holes in it with a fork. Wrap in a paper towel and microwave for 5--6 minutes. Let cool for a few minutes before cutting into it (be careful of hot steam). |
| 2. | Steam cauliflower using a steaming basket for 10-15 minutes. |
| 3. | Mash cooked cauliflower & sweet potato and mix in the remaining ingredients. |
