So I’ve been stuck in a bit of a cooking rut lately. I just seem to have lost all of my inspiration to get creative in the kitchen, I’m in desperate need of a reboot! I’m pretty sure its a result of our incredibly hectic schedule lately and my overload of design projects. I’m usually not very good at planning meals ahead of time. I go grocery shopping and buy items that are on sale or things that look fresh and then I just figure it out come meal time. Unfortunately this isn’t the greatest strategy when I’m super busy and my brain is so fried by the time dinner rolls around that I can barely talk. The thought of coming up with something creative to cook just seems out of the question.
I spent some time this weekend sitting in the sun and going through cooking magazines and pinterest (of course Oto was helping me out). It felt so good to be re-inspired and start thinking about new recipe ideas and meals. This was the first step, I guess my next step will be to actually plan out some meals, go shopping and get busy in the kitchen. I think it is actually going to help as a stress reliever, something about the meditation of chopping veggies and moving about in the kitchen has the ability to calm me down.
This chicken dish was just about the only meal I made from scratch last week. I have no idea what the rest of our meals consisted of, the whole week was a bit of a blur. I made this peanut sauce a while ago for some roasted broccoli and it was SO good, I knew I had to make it again, it was just as delicious on the chicken.
I cooked up some marinated chicken thighs and served it with some roasted broccoli, quinoa and a drizzle of peanut sauce. You really need to try this one, you may end up eating the sauce with a spoon (pre-wash cycle).
