I’ve finally gotten back into smoothie mode with the warmer weather that is upon us.  I’ve have my fair share of green smoothies so I’ve been trying to switch it up a little with some different flavors.  I got duped by the Whole Foods pint box display again, they are SO good at making me buy things I don’t need!  Something about seeing the apricots in that cute little cardboard pint box makes me want to buy them, I don’t know what it is!  Anyways, I’m glad they did because those little babies are tasty.  Buying fresh apricots can be a coin toss like peaches, sometimes they’re awesome and sometimes they’re…well, not awesome.  These were nice and sweet and had a great texture.

I like to add 1-2 dates to my smoothies, it adds the perfect amount of sweetness.  If you don’t have dates or don’t want your smoothie sweet you can omit the date.

On Sunday evening I was driving to grab some food and I saw the most gorgeous site.  The sun was setting and at the same time a rain cloud broke out, it looked as though the sky was on fire.  It was so incredible that I pulled over and snapped this photo.  There was NO filter applied to this photo, this is seriously what it looked like.  It was so amazing that every car was pulling over to watch, I felt lucky to have witnessed this little moment in time. Talk about A Sunshiny Day!

Ingredients

  • 1 mango (peeled & cut)
  • 2 fresh apricots (pitted)
  • 1 1/2 cup almond milk
  • 1 frozen banana
  • 1 scoop vanilla protein powder
  • 1 Large medjool date

Directions

1. Blend everything together in a blender until smooth & creamy.

I finally gave in to the temptation to buy some egg nog at the store this weekend.  I usually limit myself to just a few small cups every year because its so rich.  I was totally in need of a little pick-me-up yesterday afternoon so I threw together this smoothie with pumpkin purée, egg nog and coffee.  It was so incredibly indulgent & delicious!

You can use whatever your favorite brand of egg nog is, I bought Organic Valley.  Back when I worked at a cocktail company we were coming out with an egg nog cocktail mixer one year and we did a blind taste test with a bunch of competitive egg nog brands.  I was blown away by the difference between them, there were definitely some complete duds in the mix.  I don’t remember which ones were bad but I think the winner of our test was Hood.  I’m always tempted to do my own little taste tests to try out different brands of products.  Its hard to tell the difference unless you are tasting them all at the same time.

If you’re looking to be healthier but you’re still jonesing for some egg nog, try making my almond milk egg nog recipe. OR you could just buy some of the almond milk egg nog they sell at Whole Foods.  I haven’t taken a look at the ingredient list yet but I’m assuming its a little healthier than its creamy dreamy cousin.

It reminds me of the little shadow puppet shows my parents used to perform for us when we were kids 🙂  I took this picture with them when they were visiting this weekend.  There is this gorgeous area in our town that is the highest point of the island.  Its a huge field with cliffs down the ocean on 3 sides and panoramic views of the atlantic and boston skyline.  I went back here with a friend for a walk yesterday and we said it was so serene it felt like we should be wearing white dresses and twirling through to fields while singing.  How did I get so lucky to live in such a beautiful place??

Ingredients

  • 1 cup ice
  • 3/4 cups egg nog
  • 8oz coffee (cooled)
  • 3 Medium pitted dates
  • 1/4 cup pumpkin purée
  • sprinkle nutmeg
  • sprinkle cinnamon

Directions

1. Blend ingredients using a high-powered blender until smooth & creamy. Garnish with a little extra cinnamon.

I’m having a hard time finding the motivation to cook this week in the 90 degree weather so I’ve been a bit lazy.  But a cold creamy refreshing smoothie?   THAT I can get on board with.

I’m still not sure why it ended up white since the cantaloupe and peaches were bright orange, but it was still bursting with fresh fruit flavor so whatever, white it is.

This takes a little bit of planning because you need to prepare and freeze the fruit, but it’s totally worth it.  It tastes rich and indulgent but is actually pretty healthy for you, the perfect treat for a hot summer day!

Ok. I have a confession. I used nectarines, not peaches.  But “Melon, Nectarine Creamsicle Smoothie” just doesn’t have the same ring to it, am I right?  I’m sorry nectarine, I don’t mean to deny you the credit you deserve because you were completely juicy and delicious, but your name is just too long.  Its ok, I know how you feel, I grew up with the name Mai-Lis.  Those poor substitute teachers.  I would always listen to them read the roster at the beginning of class and then I would see them stop dead in their tracks.  At which point I would raise my hand and say “HERE! its My-Lease like “My Lease” on a car.”  You’d see a light bulb go off and they could finally move on.

I wish I had some popsicle molds because I would totally make popsicles out of these and then they could really be creamsicles and not just an imposter creamsicle smoothie.  I remember we used to have these cool plastic popsicle sticks growing up that had a little straw in the side so you could suck out the juice if it melted in the bottom.  It was messy but fun, gotta get me some of those…

I got a bunch for my wedding and I was so bummed I didn’t have any left over so I was jumping for joy when I saw them at Target the other day.  I want to put them in EVERYTHING.  I don’t care that they’re paper and they get mushy in the drink, they are freakin’ adorable!! I’m making a pasta dish for dinner tonight, maybe I’ll stick a few striped straws in it to make it prettier, what do you think??

Ingredients

  • 2 Medium ripe peaches (diced)
  • 2 cups cantaloupe (diced)
  • 1 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract

Directions

1. Place the diced melon and peach in a plastic bag and freeze for a day or overnight.
2. After fruit is frozen, add the ingredients to a blender and blend until smooth. You may need to add more milk to reach your desired consistency.

Do you ever wonder if you were the first person to say a sentence? Like in the history of the world.  Ever?

I’m pretty sure that no one has ever said the sentence “Super Orange Juice & Creepy Bird Adventures.” And if they have, I would like to meet them because we might have a lot in common.

We’ll get to the super orange juice in a minute, first I’d like to share my creepy bird adventure.

So a few days ago I was working in my office on the 2nd floor of our house.  I started hearing a bird chirp and I thought, hmmm… that kinda sounds like it’s coming from inside the house, but that’s not possible since there is OBVIOUSLY no bird in our house.  I told myself that a bird must be perched outside the window chirping. Yes, that must be it.

About 20 minutes later I thought I heard some banging upstairs but no one was home and I figured it must have been a noise on the street.  I turned my music off to listen closer and realized, nope, there was definitely really loud noises coming from our 3rd floor.

At that point, my mind had forgotten about the chirping and I was in FULL-ON freak out mode thinking that someone must have broken into the house and was there to kill me.  They bypassed me on the 2nd floor and went up to the 3rd floor to knock stuff around but they were definitely there to kill me.  Having been trained by bad horror movies I made my presence known by yelling up the stairs “Hellooooo??? Anyone there?? I’m going to go take a shower now!!!” I just had to make sure they knew where I was in case they wanted to kill me.

My dog quickly decided to go investigate and what followed sounded like a full-out war with banging and barking and smashing. Being the super-brave person that I was, I stayed downstairs wondering what sort of creepy rodent had made its way into our house.  After coaxing the dog downstairs and gathering up enough courage to go up, I started up the stairs slowly, armed with a tennis racket.  Then I started thinking that I might need 2 rackets for this adventure so I retreated back downstairs to find a 2nd.

I started up the stairs again, being sure to look in every direction like I was a cop approaching a deadly criminal, armed with my killer tennis rackets.  I slowly peeked into the bathroom at the top of the stairs and the it was covered with brown liquid dripping down the walls.   When I looked into the bedroom I suddenly saw a HUGE FREAKIN CROW fly OVER our bed and then he was pecking on the freaking wall with his nasty beak.

I have to say, I was happy it wasn’t a mouse or rat or other dirty rodent but I wasn’t too excited about the bird either.  I am fine with birds far away chirping in the trees but up-close they CREEP me out.  They’re all dirty & spastic and they move their head all weird.  After gathering up some courage I was able to open up a window and hide in another room until it flew out.

I still have NO idea how the damn thing got in our house but I was completely traumatized and our whole damn bedroom & bathroom were COVERED in shit so I spent a good portion of the morning cleaning up bird poop, not EXACTLY the type of day I was anticipating.

So, anyways. I survived. Barely. And I was able to make some delicious orange juice that afternoon with our new juicer.  It’s not anything earth shattering but it was simple & delicious and I thought I should share a new juice recipe with you since I’ve been juicing a lot lately. Don’t worry, it doesn’t contain any crow juice. Eww, I just made myself throw up a little.

Here’s what I included:

•  3 Peeled Oranges
•  2 MONSTER Carrots (or 4 regular carrots)
•  2 Ripe Pears
•  1 Medium Cucumber

Monster carrots aren’t a variety, they are just these massive carrots I’ve been buying at Whole Foods lately. They are about the size of my arm (I’m not talking about the ones in the photo, those are normal, these monster carrots are not).

Getting sick of your daily green monster smoothies? NO? Me neither.  But I felt like working a different color into my breakfast smoothie recently so I switched it up and used some beet juice to create a red monster smoothie.

Are you scared?  Don’t be scared.  Red monsters are the nice monsters, they don’t hide in your closet at night, they fill your body with all sorts of healthy yummy stuff.

You can play around with your own combination of fruits & vegetables, the beet juice is the main ingredient that will make it into the red monster smoothie.

If you have a juicer you can make your own fresh beet juice.  I found a bottle of beet juice at Whole Foods that I used since I don’t have a juicer.

Red Monster Smoothie

Serves 1-2

Ingredients

  • 4 Large strawberries
  • 1/4 cup raspberries
  • 1/2 Medium banana
  • 1/2 Medium apple
  • 10 baby carrots
  • 1/2 hass avocado
  • 1/4 cup frozen pineapple
  • 1/2 cup beet juice
  • 3/4 cups water
  • few handful fresh spinach

Directions

1. Add first 7 ingredients to the blender. Pour in the water and beet juice and top with a few handfuls of spinach.
2. Blend on high until smooth.

So I was planning on sharing this with you yesterday but due to yet another off-the-charts crazy busy week, I wasn’t able to get it up in time.  But ALAS, here it is!  I’m pretty excited about this one.

So lately, I’ve been trying to cut back on my sugar intake.  In general, I don’t consume a lot of sugar, most of my sugar comes from all the fruit I eat but I’ve been trying to stay away from any added sugars.  I occasionally use coconut sugar but it seems like every new sweetener is getting attacked so I’m sure that one is next.  First they said to use honey but then they said it’s still sugar and does the same thing, then they said that agave was healthier but then people realized it might actually be worse than regular sugar.  AHH, so much conflicting information!  I can’t stomach fake sweeteners either, I tried to jump on the Stevia train but it tastes too much like aspartame to me which makes me want to barf.  I am hyper-sensitive to it, if I taste something and stevia is like ingredient #30 on an ingredient panel, I will still taste it and be unable to eat it (by the way I realize I shouldn’t be eating something with 30 ingredients, but I’m just saying :).

I’ve enjoyed using dates in my protein balls lately, it’s amazing how much natural sweetness they add without having to use added sugars.  So the other day, I was thinking about how I’d like to sweeten my tea with something so I decided to experiment a little and see if I could use the dates to create a natural sweetener.  It was a success! Holy cow, I was blown away!

Literally, just dates and water. Yup, that’s it.  I also added a little cinnamon & vanilla to make it extra yummy but I don’t think it’s necessary, I’m sure it work without it as well.

I do have to add a little disclaimer in here and let you know that I have a Vitamix that blends the crap out of everything so if your blender isn’t very powerful, it’s possible it might not be as smooth or mix into liquids as well.  I’ve enjoyed adding it to my tea, salad dressings & my morning green smoothies.  I’m storing it in the refrigerator although I’m not sure it’s necessary? Anyone have any thoughts on this?

It hasn’t actually started yet, this picture is from a few years ago.  If you’ve been living in a box for the past 24 hours, Boston is supposed to get slammed with a massive blizzard tomorrow.  Whole Foods was already packed at 8:00 this morning and people are running around like crazy people ready for the world to end.  Me? I’m just excited! Excited to get cuddled inside and do some reading, maybe whip out the snow shoes and explore the island in the snow.  I’m just hoping we don’t lose power, that would really put a damper on my excitement.

Ingredients

  • 10-12 Large medjool dates (pitted)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • sprinkle cinnamon

Directions

1. Combine all of the ingredients together in a blender for a few minutes until smooth & creamy.

WIAW #9

Happy Wednesday everyone! Hope you don’t spend too much time sitting in traffic or waiting at the airport today, sounds like that’s what EVERYONE in the country will be doing.  Except for us of course, we drove up to NH yesterday so we could beat the rush and spend a little extra time with the fam.  Speaking of the fam, I’d like to go spend some time with them so I’m going to make this quick and just leave you with some yummy eats from what I ate yesterday.

Breakfast was egg whites with salsa and a green smoothie made with kale, carrot juice, pumpkin, almond milk, 1/2 banana, protein powder & coconut. Yum.

We ate lunch on the road so we stopped at Boloco (LOVE that place!)  I had a salad with romaine, olives, cucumbers, feta, chicken & black bean hummus.  I refrained from getting my favorite fatty buffalo chicken burrito and I’m glad I did, this thing totally satisfied me and I felt much better about it.  I’m going to have to try to make some black bean hummus, that stuff was GOOD!

For a snack I had some Angie’s Popcorn.  It’s a new client I’m designing for and I’m already head over heals for this brand.  Their packaging is incredibly cute and the popcorn is AWESOME, or as they would say “Totally Fantastical.”  I had a few cases of this stuff delivered to my door yesterday and I was beyond excited, I had to refrain from jumping up and down and ripping open every single flavor to try it ALL!

When we arrived at my parents house my dad whipped up this gourmet meal as if it was nothing, you know, the usual.  Scallops with a balsamic maple sauce, asparagus and sweet mashed potatoes with porcini mushrooms.  Yes, you’re looking at an example of the meals I grew up with.  Be jealous. Be very very jealous.

Pumpkin, Carrot & Coconut Smoothie

Ok, so I have to start out by admitting I wasn’t going to share this with you.  No, not because I wanted to hoard it for myself but because I made it for breakfast on a dark gloomy morning and I was grumpy and I didn’t want to drag out the camera and lights.  I just wanted to enjoy my smoothie without having to worry about getting a perfect photo so I could post it.  PLUS, I thought maybe  there were too many pumpkin smoothies circulating out there, I didn’t want to add to the pumpkin madness.

That was all before this amazing concoction touched my lips.  I took one sip and realized it would be just plain wrong not to share it, just WRONG!  It was, is, the best smoothie I’ve ever made.  THIS, is going to make it into the regular rotation and I would recommend that you add it to the rotation too, you will not be sorry (unless of course you don’t like pumpkin, and in that case you’re just not human)!

I took a trip to Trader Joe’s last week to stock up on some of my favorites.  I love the 100% carrot juice (for those of us without a juicer) and the Unsweetened Vanilla Almond Milk is awesome!

I’m not generally the type of person that can substitute an entire meal with a smoothie, I usually need something more substantial in my stomach, especially after a tough workout.  This smoothie was so rich and delicious that I felt completely satisfied just having that for breakfast, it even held me through until lunch time.  Now THAT is a successful smoothie!

I didn’t measure this exactly but here’s what went into it:

Unsweetened Vanilla Almond Milk
Pumpkin Purée
100% Carrot Juice
Protein Powder
Frozen Pineapple
1/2 Banana
Shredded Coconut
Cinnamon

WHAT MAKES ME HAPPY:

Working From Home.

I may have used this one before but I don’t care, I’m using it again because I love it!  Working from home makes me SO happy, I don’t have to waste time with a stressful commute, I can have a leisurely morning routine, I eat healthier & don’t have to be tempted by office treats and eating out, I can spend time preparing an awesome dinner and I can take my dog for a long walk at lunch.  Not only that but I get SO much work done. No distractions, no interruptions, just solid productive work time.

Another reason I love working from home?  I’m heading to Connecticut tomorrow so I can spend time with my grandparents.  I’ll still be working but I’ll just be changing the location.  I feel so lucky to have the flexibility to do this!

 

Healthy Strawberry Cheesecake “Ice Cream”

Before you stop reading because you don’t have an ice cream maker, don’t worry! I don’t either, all you need is a blender or a food processor to make this mock “ice cream.”

I’ve started a little Friday tradition with myself that involves making frozen banana soft serve.  For those of you who haven’t heard of it before, you basically blend a frozen banana until it turns creamy and then you can add any sort of flavorings you want to customize your “ice cream.”  I’ve started hitting those Friday afternoon ruts around 3:00 where I know I should do more work but my mind is ready to explode yelling “WEEKEND, WEEKEND, WEEKEND!!.”  So, I decided to play a little trick on myself and start making this healthy treat on Friday afternoons so I could enjoy it while I was finishing up those last few hours of work.  It makes it a little more bearable.

I usually just add a little almond milk, PB2, some chocolate chips and call it a day but this week I was feeling a little more ambitious so I tried a strawberry cheesecake version.  It was delicious!!

It only requires a few simple ingredients that you probably have in your pantry/fridge/freezer right now:

1 Frozen Banana
1/3 cup Frozen Strawberries
3 tablespoons Greek Yogurt
1/2 teaspoon Vanilla Extract
Graham Cracker Pieces (optional garnish)

I’m sure it would taste a little more “cheesecake-like” if you used some real cream cheese in here, but I decided to go with greek yogurt to get a little protein to hold me over to dinner.

It was thick, creamy & fruity.  “Fake” ice cream perfection!  You can choose whether you’d like to use any sweetener.  I used a little drizzle of agave to add some sweetness to the plain greek yogurt.  It was absolutely perfect, exactly what I was craving for my Friday afternoon meltdown.

 

WHAT MAKES ME HAPPY:

This weekend.

Remember how I said last week that I wasn’t ready for summer to end?  Well, I’m still sad about it coming to a close but after this weekend I feel completely content to allow Fall to start creeping in.  It was absolute summer perfection.

I started the weekend by waking up nice & early on Saturday and going for a long run with Oto as the mist was clearing and the sun was rising.  After eating a nice breakfast with Tom & running a few errands we headed to the beach to enjoy a summer lobster bake with my boot camp tribe.  It was a sunny 75 degrees with wispy clouds and ocean breezes.

They cooked up a ton of lobsters, mussels, steamers, burgers & steak for everyone.  We all came armed with our healthy side dishes (homemade hummus & guacamole, edamame salad, wheat berry salad, orzo salad, fresh fruit & veggies).

Donna brought some delicious date banana popsicles, Carla made some awesome black bean brownies and Meredith brought her famous cupcakes. Sorry if I forgot anyone, there was so much delicious food there!

It was a great afternoon on the beach with great weather, great food and even greater company.

We went home, grabbed the puppy and went over to our friend’s house to hang out, drink some beers and chat outside for the evening.

Sunday we got up early, took our morning Starbucks run and then headed down to Weymouth to enjoy a delicious brunch with some friends.  My brother & his girlfriend decided to do a beach day so when we got home I decided to go down and join them.  The sky was bright blue, 75 degrees and not a cloud in sight.  The ocean was a balmy 60-70 degrees, I’ve never felt water that warm in New England, it was fantastic!

After the beach I was able to enjoy a nice leisurely shopping trip to stock up on goods for the week.  I proceeded to buy way more produce than would ever fit in our produce drawer as usual.

You know how they say your eyes are bigger than your stomach? Well my eyes are bigger than our fridge.

I completed the day by taking a sunset walk with Oto, listening to some reggae music down at the reggae beach party and then grabbing a dinner at the golf course with Tom.

Thank you for hearing my request and giving me one last killer weekend full of sun, lobsters, laughs and friends.  It’s been a fantastic summer, I can’t wait to see you again next year! I’ll be waiting!!

My Favorite Green Smoothie…

I realize that everyone probably already has their own favorite iteration on the green smoothie but I figured I would share mine since it’s a frequent breakfast at our house.

I remember in college, my roommate Emma used to blend up some strange-looking smoothies using fruits and vegetables.  When she threw the spinach in I would give her weird and disgusted looks thinking “Oh my god, how does she drink those things?”  I now look back and realize that #1 Emma, you were ahead of the times as you always are (we also made fun of your UGGS and look where that ended up) and  #2. Maybe you weren’t so crazy after all.  Being the health nut that I am now, I can’t imagine thinking of them as disgusting.  They are delicious and filling and healthy, yum yum yum!

I recently apologized to her for making fun of her green smoothies and confessed that I was now making them all the time.  Of course it certainly helps to have a Vitamix that blends the veggies into pure liquid.  I might feel a little differently if there were chunks of vegetables and fruit in the smoothie.

I am not going to give exact measurements on this recipe because A. I think you are smart enough to figure that out and B. I never measure my smoothie ingredients because I usually make them in the morning after I get back from boot camp and I am a ravenous beast.  Using a measuring cup on the ingredients and writing them down is just not going to happen.

MY FAVORITE GREEN SMOOTHIE:

•  water
•  1 banana
•  frozen pineapple & mango
•  avocado
•  vanilla protein powder
•  a few strawberries
•  cucumber chunks
•  water
• spinach/kale/swiss chard (whatever greens I have on hand)

I usually put all of the other ingredients in first and then fill it up to the top with the greens.

If you’re one of those lucky people who can have a green smoothie to replace a meal then you go for it! I’m sincerely jealous of you, but unfortunately that’s not me.  I’ll drink it and feel great and then two hours later I’m ready to eat my arm off.  I usually have my smoothie with 1/2 ezekiel english muffin with almond butter and I’m good to go!
