Apple, Sage & Goat Cheese Stuffing

So Thanksgiving is approaching and I’m already getting super excited.  Anyone else with me?? It is my absolute favorite holiday (after Christmas OF COURSE!).  We always go to my grandparents house which is super cozy and we spend quality time with the family and eat lots of delicious food, what’s better than that?  My grandmother’s stuffing is so simple, but one of my favorite parts of the Thanksgiving meal.  I can’t compete with her recipe but I figured I’d come up with something new and different that would give us the excuse to enjoy some stuffing BEFORE Thanksgiving! (gasp!)

It turned out pretty darn delicious!  If you’re looking for a new stuffing recipe this year, this is a great one to try.  The combination of soft apples with warm goat cheese was divine.  I’m sure it would be even better with sausage!  I just couldn’t fit it into the title (jk, I didn’t have any).  I can just imagine this with some of my dad’s maple sage breakfast sausage, mmmm, drooool….

I thought it only fitting to post a comfort food recipe on a day where a lot of people will have the first snow of the season.  I’ve seen a lot of people posting about it on facebook, but we’re just getting rain & wind here on the coast.  I’m fine with that, I’d like to get our first snow when I can guiltlessly blast the Christmas music and frolic around the house in JOY!



Seat Warmers!

My friend Michaela & I were talking about this the other morning.  She was saying how her automatic car starter makes her happy.  I would LOVE to have one of those but I don’t, so I rely on my seat warmers.

Know what’s tough? Lifting your butt out of bed to go to boot camp when it’s dark and freezing outside.

Know what makes it better? SEAT WARMERS!  Just knowing that I’ll have a toasty butt in a few minutes makes it that much easier to make it out the door.

Apple Sage & Goat Cheese Stuffing

Allergy Milk, Wheat
Meal type Bread, Side Dish
Misc Serve Hot


  • 1 tablespoon olive oil
  • 1 Small onion (diced)
  • 3 celery stalks (sliced thin)
  • 1 Large apple (sliced thin)
  • 3 Medium garlic cloves (minced)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/2 loaf of crusty whole wheat bread (or whatever bread you have)
  • 1 cup chicken broth
  • goat cheese
  • garlic powder


1. Preheat oven to 350 F.
2. Cut bread into small cubes and place in a single layer on a baking sheet. Spray with cooking spray and sprinkle with salt & garlic powder. Bake for 10-15 minutes.
3. Heat olive oil in a dutch oven over medium high heat. Add celery, apples & onion and cook for about 10 minutes until nicely browned and soft. Add garlic and continue cooking for another 1-2 minutes.
4. Add broth to the vegetable mixture and stir in cinnamon, sage and salt. Stir bread cubes and goat cheese into the broth and vegetables.
5. Place in an oven safe baking dish and bake for 35-45 minutes.

  1. Yum, the stuffing looks delicious! I am always so sad that we have no Thanksgiving here in Germany when I read in all the blogs about it.
